These Pumpkin Spice Peanut Butter Blossoms are a pumpkin-spice peanut butter cookie topped with a Pumpkin Spice Hershey Kiss. They are a perfect fall treat.
I loved Peanut Butter Blossoms growing up, my mom never made them but her best friend, Connie did. And she didnโt just make them at Christmas, she made them all year long. These are one of my favorite cookies. And something I really love to do with these cookies, is I pull them out a minute early, add the Hershey Kiss then stick back in the oven for 1 minute with the Hershey Kisses on top. The chocolate comes out warm, but not completely melted. Oh man, eat one of these suckers warm and you will be in heaven. Oh, add a cold glass of milkโฆ.okay I am drooling now.
When I saw the Pumpkin Spice Hershey Kisses this year, I knew I would be making them into a blossom type of cookie, and so glad I did. I love the addition of the pumpkin spice to the dough, as it doesnโt let the peanut butter over play the cookie, this is such a great balance of flavors.

How do you make Pumpkin Spice Peanut Butter Blossoms?

Preheat oven to 375ยฐF.

Beat together butter, peanut butter, and sugars in a large mixing bowl on medium speed until it is light and fluffy, about 3-4 minutes. Add in the egg, stir until well combined. With the mixer on low speed, add in vanilla, salt, flour, and baking soda until it is well combined.

For the topping, combine 1/4 cup sugar and 1/2 teaspoon pumpkin pie spice in a small bowl. Set aside.

Using cookie dough scoop, scoop dough and roll in sugar & pumpkin spice, place on cookie sheet and repeat with remaining dough. Cook 12 cookies at a time, on cookie sheet for 8-10 minutes.

*If you want smaller cookies, roll dough into 1โโ balls, you will need 48 Hershey kisses vs 24.

Once you remove from oven, immediately press in 1 Pumpkin Spice Hershey Kiss. Place on cooling rack until set. Enjoy!

Notes
Kids review: They loved them, it is always so fun to watch them eat any type of blossom cookies. Most of the kids will eat around the Hershey Kiss, then eat it last but my sons Cannon & Madden eat the Hershey Kiss of the top and then sometimes eat the cookie. Cookie eating awesomeness.
