I am loving the Pillsbury Girl Scouts® Baking Mixes. I’ve made all of them and can tell you that every single baking mix tastes just like your favorite Girl Scout Cookies. Naturally, since my favorite cookies are the Thin Mints, I was drawn to that mix. We actually used the Girl Scouts® Thin Mints® Brownie Mix to make pancakes. Best pancakes ever! Seriously epic!

This week, school started for all 5 of my kids, yes all 5! My youngest even started kindergarten. Let me tell you, I have never done the official “ugly” cry before, but friends, I have now. Monday was a bit rough. So, I decided to do what I do best and make, bake and devour a dessert. The emotion of it all required chocolate – lots of chocolate. I used the Girl Scouts® Thin Mints® Cupcake Mix for the cupcakes, and then stuffed then with chocolate chip mint ice cream. The best part about Thin Mint Cupcakes is that it comes with the most amazing chocolate icing. YUM! Chocolate mint cupcakes, stuffed with mint chocolate chip ice cream and finished off with chocolate mint ganache are chocolate mint divinity and the perfect cure for Mama’s back to school blues.

How do you make Thin Mint Ice Cream Cupcakes?

Prepare Girl Scouts® Thin Mints® Cupcake Mix according to package directions.

Bake cupcakes and let them completely cool on a baking rack.
Once the cupcakes are completely cool, cut the tops off the cupcakes.

Using a small spoon remove the center of the cupcake.

Add a small scoop of ice cream. I used a cookie dough scooper to get the perfect amount.

Prepare chocolate ganache according to package directions.

Dip the tops into the ganache and immediately place the top back onto the cupcake with the ganache facing up.

Repeat with remaining cupcakes and then place in freezer until ready to serve, about 30-45 minutes.

Pillsbury Girl Scouts® Thin Mints® Cupcakes

  • 1 Pillsbury Girl Scouts® Thin Mints® Cupcake Mix
  • 4 tablespoons butter softened
  • 1/3 cup milk
  • 2 eggs

Ganache

  • ganache mix included in Pillsbury Girl Scouts® Thin Mints® Cupcake Mix
  • 2 tablespoons milk
  • 1 tablespoon butter
  • Mint Chocolate Chip Ice Cream

Instructions
 

  • Prepare Girl Scouts® Thin Mints® Cupcake Mix according to package directions.
