No Bake Chocolate Mint Oreo Cheesecake is a delicious, creamy, chocolatey no-bake dessert that you and the kids will love. Easy to make, easier to devour.

Okay, I know this is getting a little ridiculous with all the cheesecake being made around my home. I really can’t help myself. It is EASY, creamy, and delicious; I can make it with fat-free ingredients and it will still taste amazing!

While grocery shopping last week I saw there was a sale on Oreos, I literally walked by them 3 times before I caved. I wanted the double-stuffed ones but they were already gone! AGH! So I went for the mint. Kids were excited, but I told them I was going to surprise them with a treat to celebrate my 5-year-old daughter, Jersey, who is graduating preschool. So here is what we made. And it became an instant favorite.

How do you make No-Bake Chocolate Mint Oreo Cheesecake?

In a food processor add the entire package of Oreos and process until cookies resemble coarse crumbs. Pour crumbs into medium mixing bowl, add butter and mix together until it starts to stick together.

Press into the bottom of pie pan. Set in the fridge until ready to use.

If you are making individual servings then add 3 tablespoons of the crumbs at the bottom of each cup. I completely eliminated the butter and sugar. This makes it lower in calories and sugar!

In a small mixing bowl or large glass measuring cup, melt chocolate in microwave for 1 minute. Stir until completely melted. Microwave for another 30 seconds if necessary. Set aside and cool to room temp, or cool to the touch.

Beat cream cheese, sugar, chocolate, and peppermint extract in large bowl until smooth. Fold in Cool Whip until combined. Spread over prepared crust.

Chill until filling is slightly firm, 30 minutes to an hour. Serve and devour!

Mint Oreo Crust
- 15.25 ounce package Mint Oreos
- 1/2 cup unsalted butter room temperature
- 1/4 cup sugar optional
Chocolate Mint Cheesecake
- 16 ounces cream cheese
- 1/4 cup white granulated sugar
- 8 ounce container Cool Whip
- 8 ounces Ghirardelli 60% cocoa chocolate chips melted
- 1 1/2 teaspoons peppermint extract
