Mini Oreo No-Bake Cheesecakes are so easy to make and even easier to devour. These are a delicious and perfect summer time treat.
I love easy no-bake desserts for the summer. No-bake cheesecakes are my absolute favorite! My kids prefer ice cream though. I took their favorite ice cream dessert Oreo Ice Cream Cake and made it into a cheesecake.
Now typically when you make a no-bake cheesecake, it is like an entire cake or pie so you have to wait for it to set. I just didn’t want to take the time or the patience. I thought what if I just made them mini, then it would take only a short time to set or maybe, just maybe, we could eat them right away.
So that’s what we did and guess what? It worked! My daughter Jersey and I ate one right away, as did my husband, Jake. Insta-yum! To take this up a notch, we decided to add some ganache. Holy yummers!
Of course, we had chocolaty hands because we didn’t want to wait for the chocolate to set up – but we did stick the rest of them in the fridge and once our friends and family came home from the pool we pulled them out. Kids love these. I loved that each of us could have one little mini-dessert and be done.
What is even better is that this recipe takes only a few steps and has only 5 ingredients! Now, this is a true no-bake dessert that will save you time in the kitchen giving you more time to enjoy your summer.

How do you make Mini Oreo No-Bake Cheesecakes?
Remove 8 Oreos from the package in place in a Ziploc bag, zip-up bag and crush the 8 Oreos into crumbles. Set aside.
In a medium mixing bowl beat cream cheese until smooth. Stir in Cool Whip and crumbled Oreos.
Set aside another 6 Oreos from the package for topping.
In a small saucepan add the whipping cream and bring to a boil, remove from heat and add in chocolate chips. Do not mix or stir them in, let the chocolate sit for 5 minutes. Stir until smooth. Let it cool while you prepare the mini-cheesecakes.
With the remaining Oreos follow the steps below.
Separate the two chocolate wafers of the Oreo, so that just one side will have the white filling, Using a cookie dough scoop or tablespoon, scoop some of the cream cheese filling and place on either one of the chocolate wafers.
Then place the other wafer right on top of the cheesecake filling. Press down slightly, not too much though you don’t want the filling oozing out.
Repeat with the remaining Oreos and cheesecake filling.
Once all the mini cheesecakes are made, dip the mini cheesecakes into the ganache or drizzle over each one. If you choose to dip them, just hold on to one of the wafers and then dip the rest of the cheesecake in until the ganache hits your fingertips and pull out.
Repeat with remaining mini-cheesecakes. Crumble the remaining 6 Oreos that you set aside and sprinkle on top of each cheesecake.
Serve right away or set in the fridge until chocolate is set, about 20-30 minutes.
