I struggle sometimes coming up with new simple, easy ideas for dinner. Gasp!!! I know, I know, I am a food blogger and that seems like an oxymoron. I am also a busy mom of 5 kids, and well, that means there are lots of days where I lose all sanity.
So recently I reached out to my friends on Instagram and Facebook and asked for their favorite family meals that were easy to make in a pinch. My sweet friend Angela replied with this amazing meal. She told me she makes chicken cordon bleu this way because she is too lazy to pound out the chicken, and stuff & roll it. I laughed because we all can relate. I loved how she said she put it all together, and she was so right when she talked about how good it is. Our family is in love with this meal, and you will be too!
This Creamy Chicken Cordon Bleu Casserole saved me on one of those crazy nights. I try to be on top of menu planning and grocery shopping as much as possible for 2 reasons: My sanity, and it saves money.
I don’t want to be stressed every day or hours before dinner trying to figure out what to do. So my sister and I meet every Saturday morning for drinks and pumpkin bread, and plan out our menus. We browse Pinterest, make our menus and grocery lists, and all over the sisterly conversation.
I grew up only a 1/2 mile from my local Kroger store, King Soopers, and I remember the first time my mom let my sister and I ride our bikes to the store to get her something; we thought we were big-time. Now I am less than a mile from another King Soopers, and my kids do the same thing that my sister and I did – such fond memories in the making. I love shopping there. Not only is the location ideal, but I have come to know everyone who works there. I mean, I kinda stand out with 5 kids, and being a food blogger, I’m always there. I have even been known to take my experiments there for them to try.
Sweet Grandma Carol, a checker who recently retired from King Soopers, became an adopted family member. Not only do I love all of the Kroger branded foods because of the quality and price, but I am obsessed over their Kroger REWARDS Visa. How do you make Creamy Chicken Cordon Bleu Casserole?

Preheat oven to 350 degrees.

Place the chicken tenders on the bottom of a glass 9×13 baking dish. Fit as many as you can without overlapping. Season chicken with salt and pepper.

Place 1 slice of cheese on each chicken tender, you may need to fold you provolone cheese in half so that it fits on top, depending on how it sliced.

Place a half piece of ham on top of the cheese. Roll up if needed so that it is sitting directly on top of the cheese and not falling off.

In a small mixing bowl add cream of chicken and milk. Whisk until well combined and smooth.

Pour the cream of chicken mixture over the chicken tenders. Then top each piece of ham with about a tablespoon of bread crumbs.

Please in preheated oven and bake 30-35 minutes until completely cooked all the way through.

Remove from oven and serve with veggies and rolls or just eat on its own.

- 8 - 10 slices provolone cheese
- 4-5 slices black forest deli ham
- 10.5 ounces cream of chicken
- 3/4 cup milk
- 8 - 10 tablespoons bread crumbs
- salt and pepper to taste
Instructions
