How to make Easy Chicken Tortilla Soup.
- Add all of the ingredients, chicken broth, diced tomatoes, ranch, corn mix, and taco seasoning into a pot and place over medium-high heat and allow to come to a slow boil.
- Reduce heat to low. Cover partially with a lid and cook for 20 minutes.
- For the last 5 minutes of cooking time, remove the lid and allow it to continue to simmer. Remove from heat and let it sit off the heat for 5 minutes before serving. This will allow it to thicken up and cool off a bit.

Ingredients
- 32 ounces Imagine® Organic Chicken Broth
- 2/3 cup Great Value Ranch Dressing
- 2 cup shredded Rotisserie Chicken
- 2 14.5 ounce cans Great Value Diced Tomatoes with Green Chiles

- Add all of the ingredients into a pot and place over medium-high heat and allow to come to a slow boil.

Hi Jess! I’m so glad you enjoyed it! We have a different Crockpot Tortilla Soup recipe you could use! If you’re looking for the same flavor, you could try replacing the base ingredients (sauces and seasonings) in that recipe with the ones from this one, while following the instructions from the crockpot recipe, but I can’t guarantee it would work perfectly as it hasn’t been tested.
My ranch dressing has kinda coagulated in little white specks on top of the soup. Did I doo something wrong ?
Hmmm, that’s interesting. Sorry, that happened. Did you put it in when the other ingredients were hot?
Or the temperature of your pot was too hot, try reducing the heat that shouldn’t happen. Try over medium-high heat to bring to a boil and then reduce heat to low or even simmer. You should be set with that.

This is such a wonderful soup! Always a go to when we are craving comfort food!
While this sounds like a great soup the ingredients doesn’t match the picture. I see black beans and colorful red and green, perhaps bell peppers? But there isn’t anything like that in the recipe.
The frozen corn mix that is used is a Southwestern style blend as stated on the recipe card. It usually contain beans, peppers, and onions and can be found at any grocery store in the frozen veggie section. There is also some red and green from the can of diced tomatoes with green chiles. The frozen southwest corn blend I’ve seen is seasoned?? Should that be used or is there an unseasoned southwest corn blend??
For the recipe we used “Bird’s Eye recipe ready southwest blend”. As far as I know, it is not seasoned. Their other blends that aren’t “recipe ready” may have seasoning. If that’s the case you may want to leave out just a bit of the taco seasoning. When it’s ready give it a taste and add more if you think it needs it!

Hi Darlene, The frozen corn blend used in the recipe does have black beans in it! It also has red bell peppers and onions. If you’d like to add them separately you definitely can.

The picture of this soup looks awesome on Pinterest, but I notice there seems to be black beans in the soup. However, I haven’t been able to locate a frozen southwestern corn blend including red and green peppers with black beans too. And I don’t see black beans listed as an ingredient.
Hi! We usually use Birds Eye Southwestern blend, which does have black beans. You can definitely sub with canned black beans, but be sure to drain it well before adding as many as you’d like.
Since I do not eat beans I used can corn. Next time I will need to add bell pepper and onions. It was still tasty.

We have absolutely loved this recipe! We have made it twice, but both times it has been almost unbearably spicy. We can’t seem to figure out why so we can minimize it. Do you know what this would be from? Different taco seasoning? The green chiles? I am just curious!

Hi Katie! Are you using mild taco seasoning? You could try using separate cans of mild green chiles (4 oz) and diced tomatoes as listed, as the chiles could be the problem! Let us know if you get this figured out!

If you can’t find the southwestern corn mix what can you substitute?
The mix contains corn, black beans, onions, and peppers so you can either use frozen versions of each or frozen corn, a can of beans, and cooked onions and peppers in place of the corn mix.
The picture shows black beans, but they aren’t listed on the ingredient list. To add or not to add?
The frozen Southwestern corn mix used has black beans. If your mix doesn’t, you can use canned. Just be sure to drain them first.
I left out the ranch dressing because it’s not a family favorite, still delicious! family of 4 devoured the whole pot in 2 days! Two thumbs up!
