Easy Chicken Tortilla Soup

Easy 6-ingredient Chicken Tortilla Soup is easy to prepare and incredibly delicious. Great for a busy night!

Ingredients
 

  • 32 ounces Imagine® Organic Chicken Broth
  • 2/3 cup Ranch Dressing
  • 2 cup shredded Rotisserie Chicken
  • 2 14.5 ounce cans Diced Tomatoes with Green Chiles
  • 1 package Mild Taco Seasoning
  • 1 14 ounce package frozen corn – preferably Southwest Blend with peppers and onions
  • Optional topping: crunchy tortilla strips
  • 14.5 ounces canned black beans drained and rinsed

Instructions
 

  • Add all of the ingredients into a pot and place over medium-high heat and allow to come to a slow boil. 
  • Reduce heat to low. Cover partially with a lid and cook for 20 minutes.
  • For the last 5 minutes of cooking time remove the lid and allow it to continue to simmer. Remove from heat and let it sit off the heat for 5 minutes before serving. This will allow it to thicken up and cool off a bit.

    I love to cook but , I’ve been sick and live in a nursing facility. so all the foods cooked for us. I have a awesome nurse who wanted soup I offered and she bought all the items and I got to cook it. in the physical therapy room that has a small kitchen. I used a crock pot to make enough for staff. it turned out great. thanks ❤️

    This was my first time making this soup and it was delicious!!!! The only thing I substituted was instead of regular ranch, I used jalepeno ranch!!!!
