I love making donuts, and would much rather a baked homemade donuts over a fried one. Especially baked ones! This recipe is incredibly easy and delicious.

I love blueberry season, and blueberries is so versatile that is it is one of my favorite fruits.

My husband asked me what I was doing with them and asked if I would make blueberry donuts. What??? Come again, did he ask me for donuts? My husband, who swears to hates “sweets”.

Baked Blueberry Cake Donuts

These Baked Blueberry Cake Donuts are just amazing! Topped with a cream cheese and lemon zest frosting, these cake donuts make a delightful baked treat.

Ingredients
 

  • 1 1/2 cups flour
  • 1/4 cup brown sugar
  • 1/2 cup white granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 3 tablespoons butter melted
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 3/4 cup fresh blueberries

Cream Cheese Frosting

  • 2 tablespoons unsalted butter softened
  • 2 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1/2 – 1 teaspoon milk
  • 1 tablespoon lemon zest for garnish optional (about 1 lemon)

Instructions
 

  • Preheat oven to 350 degrees. Grease 2 donut pans using cooking spray. Recipe makes 12 donuts.
  • Melt butter in a small bowl and set aside to cool.
  • In a medium mixing bowl add together flour, brown sugar, white sugar, baking powder, salt, and nutmeg. Set aside.
  • In a small mixing bowl whisk milk, vanilla extract, and egg until well combined.
  • Mix together the wet and dry ingredients until just combined, make sure you don’t over-mix, you want a fluffy donut not a dense one! Gently fold in blueberries.
  • Take a piping bag or a Ziplock bag with a corner cut off and add batter carefully. Pipe the dough evenly into the prepared pans, about 2/3 full.
  • Bake for 11-13 minutes, remove from oven and cool for 1 minute before you turn them over onto a cooling rack. Let the donuts cool on rack and make the frosting.

Cream Cheese Frosting

  • In a small bowl, beat together the butter and cream cheese with an electric mixer or hand beater. With the mixer on low speed, add the powdered sugar until smooth and creamy. Stir in lemon juice.
  • Once frosting is done and donuts are cool, dip the tops of the donuts into the frosting and turn over, back onto the cooling rack. Garnish with lemon zest if desired. Serve right away, enjoy!

Notes

Note: Frosting will not harden, it will stay soft. Do not stack them to store.

  1. I’m LOVING how cheap the blueberries are right now around here. I think I have 3 or 4 containers in my fridge right now because I just keep buying them! I should probably use some to make these – they look delicious!

  2. Found recipe incomplete. Calls for melted butter but doesn’t say when to add. Doesn’t say about adding milk for glaze either. Found it difficult to pipe with the blueberries hard to pipe at times. Not a fan
