How to make Creamy Salsa Chicken

Over medium-high heat, cook chicken in a large skillet with oil for 1-2 minutes.

Add taco seasoning, garlic powder, and onion powder; stir to coat the chicken. Continue cooking until the chicken is no longer pink in the center.

Add salsa and cream cheese to the skillet; bring to a light boil, then reduce heat and stir until the cream cheese has completely melted and is incorporated. Cook for another 3-5 minutes over low heat or until heated through and the chicken has a nice coating. 

Tips on making cream cheese salsa chicken.

  • Fewer calories. You can use low-fat cream cheese to consume fewer calories.
  • Make this in your slow cooker. Throw all the ingredients in your crock pot and cook on high for 3-4 hours or low for 4-6 hours. Shred the chicken when done and stir together to make this easy meal in your slow cooker.

What kind of salsa should I use?

Any store-bought salsa can be used for this recipe, but I recommend a medium restaurant-style salsa, as it works well with the creamy cheese and gives it a nice creamy texture.

Choose a saucy salsa over a fresh, uncooked salsa, like pico. A chipotle-flavored salsa would also be great, and give it some smokiness to the dish profile.
