This “BLT” Kale Salad has large chunks of bacon, kale, and roasted tomatoes with a lemon garlic dressing. It takes the term “BLT” to a whole new level.

I love kale, as you know. My hubby, well, it takes the right ingredients to have him swooning over this crunchy, fiber & antioxidant-filled green. But when he tried this salad, he couldn’t believe it. Literally, for a few minutes, there was silence (a good sign) and then he said: “This is the best freakin’ salad I have ever had”. He gushed. I smiled.

I couldn’t stop eating it, either —literally. He and I ate the entire salad on our own. Did you read how many cups of kale that is yet? Seven cups! Holy bat-balls, I can’t believe it. This dressing perfectly marries all the flavors together. It is not overly lemony, and the garlic adds just the right touch.
I can’t wait for you all to try this “BLT” Kale Salad. Seriously, we are having it again today!

How do you make “BLT” Kale Salad?
Make the vinaigrette by mixing together lemon juice, garlic oil, olive oil, honey, garlic, shallots, and salt in a small mason jar or bowl. Set in the fridge to chill until ready to serve.
Prepare kale by roughly chopping.
To take some of the bitterness from the kale, gently squeeze the kale once you have chopped it.
Add kale to a large serving bowl, top with chopped roasted tomatoes, and bacon. Drizzle with 3/4 of the dressing from the jar and gently toss. Serve immediately with additional dressing if desired and freshly grated Parmesan cheese.
This salad is also great prepared an hour in advance, let it chill in fridge until ready to serve. Enjoy!

Ingredients
- 7 cups rainbow kale
- 1 lb. thick cut bacon cooked and crumbled into large chunks
- 1 cup roasted tomatoes
Optional Toppings:
- Italian Herb Biscuits serve on the side or chop up for croutons
- Parmesan Cheese
Lemon Garlic Dressing
- 1/3 cup lemon juice
- 2 tablespoon garlic oil
- 2 garlic cloves finely diced
- 1 tablespoon olive oil
- 1 tablespoon diced shallots
- 1 tablespoon honey
- salt to taste
Instructions
