I love easy meals that I can just quickly make in little time and with ingredients I have around the house. And this Easy Beef Enchilada Bake has all of that. Prep time is 10 minutes and the total bake time is 10 minutes that makes this a 30 minute meal. Yahoo! The extra perk is that I made this with ingredients I already had at home, and you can too!

February is #NationalCannedFoodMonth and how easy is it to raise awareness on something that makes dinner, easy, less expensive and nutritional. I stock up on my canned food essentials on my weekly shopping trips with includes canned tomatoes, enchilada sauce, green chiles, tomato sauce, cream of chicken, beans and chicken broth. I love the prices and ease of shopping at Safeway, so naturally I picked them up while also getting my favorite drink at the in-store Starbucks, an added bonus.

Canned food has a special place in my heart, not just my stomach. When my oldest son, Aiden, was in kindergarten, he came home one day excited about a hundred-day-of-school project. My mind went straight to 100 stickers, piece of macaroni, or even pennies glued to a poster board. However, my son looked up at me with those 6-year-old eyes and said, “I want to give 100 of my toys away to kids that don’t have toys.” Humbled, we smiled and then explained that we probably couldn’t do that, but he could think about what else people might need. He instantly came up with hunger. Eventually, he decided on collecting 100 pounds of food which he could then give our local foodbank.

So we helped him make signage that he hung around his neck that explained what his mission, and he proceeded to walk door to door asking anyone and everyone for cans of food. He ended up collecting more than 500 pounds of food. He was and still is an amazing example of benevolence and selflessness.

While we think a lot of canned foods for food drives like my son Aiden did. I love that when using canned foods I save time when it comes to meal prep and I get just as a nutritional meal as if I were using frozen and canned food typically cost half of frozen.

My kids love this Easy Beef Enchilada Bake because it has chips instead of tortillas. I love it because of the creaminess and well the ease of the recipe. So dig in your cupboard or take a trip to your local Safeway and pick up these ingredients. Dinner is served.

How do you make Easy Beef Enchilada Bake?

Preheat oven to 350 degrees.

In a medium skillet add ground beef, season with salt and pepper, cook until the beef is completely cooked through, about 5-7 minutes. Remove from heat, drain grease and set aside.

In a medium bowl mix together enchilada sauce, green chiles, black beans, sour cream, cream cheese or cream of chicken, cumin, chili powder, 2 cups shredded cheese, and beef. Stir together until well combined.

In a 1 quart casserole dish, pour Frito chips in the bottom, add beef mixture on top of the chips, and then sprinkle ½ of remaining cheese on top. Bake uncovered for 20-25 minutes or until warm and bubbly and cheese is melted on top.

Serve immediately topped with lettuce and chopped tomatoes. Some additional fantastic toppings include: guacamole, sour cream, red onion, and salsa.

Ingredients
 

  • 1 lb. ground beef
  • salt and pepper to taste
  • 15 ounce can enchilada sauce
  • 1 cup sour cream
  • 4 ounce can green chiles
  • 15 ounce can black beans rinsed and drained
  • 4 ounces cream cheese softened or 1 can cream of chicken
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 9.75 ounce Fritos chips
  • 2 cup shredded cheese plus 1/2 cup for topping

Topping ideas

  • 1/2 head of lettuce chopped
  • 1 roma tomato chopped
  • guacamole
  • sour cream
  • red onion
  • salsa
