I love ice cream. This past month while my husband and I were shopping at Costco there was a sample of some mint chocolate chip ice cream. My hubby brought it to me with a smile on my face and asked me to guess the ingredients, I could taste the mint and chocolate but why was he grinning? Well, it was made from avocado! He was excited to find healthy ice cream. So he got the recipe and we were off to make our own. After trying the recipe about 5 times, I wanted something that was more creamy, a texture like actual ice cream and not a smoothie – so I went to Google and asked – and it was the Dr. Oz recipe that became my favorite.

How do you make Mint Chocolate Chip Avocado Ice Cream?
Add the avocados, banana, coconut oil, extract, maple syrup, and milk into your Blendtec Blender or other food processor/blender. Process in your blender until smooth. I would suggest if using a Blendtec to use the ice cream setting, it works great!
Stir in the chocolate chips and pour into a serving dish, cover and set in the freezer. Stir every hour or so for the first 3-4 hours while it is in the freezer, to avoid chunks of ice forming.
The ice cream will be ready between 4-6 hours depending on your freezer. Enjoy!

Ingredients
- 3 avocados ripe

- 2 tbsp unrefined coconut oil
- 1 1/2 tsp mint extract
- 1/4 cup maple syrup
- 1/2 cup milk
- 1/3 -1/2 cup bittersweet chocolate chips
