I love making simple, yet wholesome meals and snacks for my family. This summer I am trying to build up a plethora of meals and snacks that are easy to throw together to make for lunches. Quinoa has been one of my favorite things to use in snacks and meals because it is packed with protein and is an excellent source of fiber. However, I found that in many instances, when I wanted to include quinoa, I didn’t because of the hassle of making it & having to let it cool.
I love these bars because they can be used both as a lunch, serving them with a piece of fruit & some chopped up veggies. My husband said it is just like eating a peanut butter & honey sandwich, but better. Or they can be served alone as a mid-afternoon snack. Either way, I can’t wait to put these in the kids’ lunches this school year. And trust me, these No-Bake Quinoa & Oat Bars are headed with us to the pool and other activities the rest of the summer.

How do you make quinoa & oats bars?
Line a 9×9 pan with parchment paper.
In a large mixing bowl combine oats, honey, peanut butter, and quinoa.
Stir together until completely combine and press into a prepared pan and place in the refrigerator for 2-3 hours.
Cut into squares and serve.
Keep these bars chilled it will help with the stickiness and help keep their form.

Ingredients
- 1 cup peanut butter
- 1/2 cup honey
- 1 cup cooked quinoa
- 3 cups rolled oats
Instructions
- Line a 9×9 pan with parchment paper.
- In a large mixing bowl combine oats, honey, peanut butter and quinoa
- Stir together until completely combine and press into a prepared pan and place in the refrigerator for 2-3 hours. Cut into squares and serve.
- Keep these bars chilled it will help with the stickiness and help keep their form.
- Press into prepared pan. Place in refrigerator until set. Cut into squares.

What’s the serving size in a container of minute quinoa? I have quinoa in bulk.
if using regular quinoa, not the instant, would that be around a cup of cooked quinoa?
Might be a very silly question but is it uncooked quinoa?
Hi Lisa, the quinoa used in the recipe is cooked and ready to eat. It’s a great way to use leftover quinoa! Just be sure to let it come to room temperature before using it in the bars if you are making it fresh.
In my country we don’t have ready quinoa,how much can I use ?
Hi Lina! Each cup has 4.4 oz of cooked quinoa or just over 1/2 cup. That’s all you need for the recipe. Enjoy!

Could you use almond butter instead of peanut butter?
I have not tried this, but I would suggest another nut butter instead.
Sooo good! Iโve been looking for a gooey oatmeal bake and this is it! No need to ever buy granola bars again. Iโd love to see variations of this if you have any.
