It was my mom’s birthday and of course, I wanted to make her birthday cake. Her favorite ice cream is Rocky Road and I thought what a perfect way to celebrate my mom. So I decided that an ice cream bake would be the way to go, naturally I made the crust using brownies, I mean you can’t go wrong with that right?

I topped this bad boy with Cool Whip, although you could use homemade whipped topping instead. I would suggest my homemade Chocolate Whipped Cream (yum) and the BEST EVER Hot Fudge Sauce. Marshmallows and peanuts go well as a topping too. We opted for just marshmallows.

For my mom’s birthday, I had each of the kids make cards for her. It was very sweet what each of them had to say. My oldest, Aiden wrote, “Nana – you are one of the kindest, if not the kindest person I have ever met. Thanks for being amazing.” Simple words, yet so true. My mom is the kindest, she wears her heart on her sleeve, and well, is Fort Collin’s Mother Theresa. I am blessed to have her in my life as my mom. Cheers to many more, Mom. I love you.

I should note that I got a very late start on the cake. When I pulled the cake out of the freezer as we got ready to leave, and realized that I had not let is set in the freezer long enough, so we had to go by Dairy Queen to pick up one of their amazing ice cream cakes. As for my mom’s actual birthday cake, we are eating tonight! (NOTE: the piece pictured was eaten, of course by me and the kids, I mean I couldn’t let it go to waste.)

How do you make Rocky Road Brownie Ice Cream Cake?

Prepare brownie mix according to package directions, be sure to bake in an 8 or 9-inch springform pan. You may also use a square or pie pan, just not as easy to remove.

Cool brownies, I quicken the process by sticking them in the fridge after sitting on the counter to cool for 10 minutes.

Once brownies are cool, remove ice cream from freezer and spread the ice cream over the chilled brownies. Making sure to smooth it out. It is easier if you let the ice cream sit on the counter for 5-10 minutes to let it soften just a bit.

After you have spread the ice cream over the brownies, cover with wax paper, making sure to stick the wax paper on the ice cream so that it doesn’t fall off.

Set back in the freezer for 2-4 hours to fully set and harden.

Right before serving, make my Best Ever Fudge Sauce. Trust me, it is easy and totally worth it.

Remove cake from freezer, slice into servings, top with whipped cream, drizzle with hot fudge sauce and any additional toppings you desire: marshmallows or peanuts.

  • 2.25 quarts Rocky Road Ice Cream I used 1 1/2 containers of Breyers
  • 1 brownie mix I used Ghirardelli, prepared & baked in 8 or 9-inch spring form pan
  • 8 ounces Cool Whip or homemade whipped cream
