Slow Cooker Greek Chicken Taquitos is a twist on classic chicken taquitos. Made with fresh tomatoes, feta, and Greek dressing, this is so easy & delicious.
I love easy slow cooker meals near the end of the summer, especially when school starts. Taquitos are so easy and delicious, and the kids love them. Naturally, they are a to-go-to for our family. Some of our favorite dinners are taquitos.
My daughters, because of their love for barbecue, love my Slow Cooker Barbecue Chicken Taquitos. My sons love my Slow Cooker Buffalo Chicken Taquitos because they taste like their favorite chicken wings.
I was trying to come up with a new twist that our whole family would love. We have been eating a ton of salad this summer so I decided to take one of my favorite salads and add a slow cooker twist. Using tomatoes, Greek dressing, feta cheese, olives, and lettuce, I created our new favorite taquitos.
While I didn’t have time to come up with a dip to dunk these taquitos into. my friend Jen from Yummy Healthy Easy had one, so be sure to check that out the link to the dip in the recipe below.
Cheers to sunny days and slow cookers for giving us delicious meals that are easy.
XOXO San
How do you makeย Slow Cooker Greek Chicken Taquitos?
Spray the inside of your slow cooker with cooking oil.
Add chicken, Greek dressing, water, garlic, and ranch packet and toss to combine.
Cook on low for 4-6 hours or on high 3-4 hours.
Remove chicken and shred. Place chicken back in the sauce, add tomatoes and feta cheese and mix together.
Place about 1/4 cup of the chicken mixture onto the middle of each tortilla. Top with 1 tablespoon feta cheese, 4 tomatoes halves, and kalamata olives if desired. Roll tightly and place in a single layer on a greased baking sheet. Bake 10 minutes, until tortillas are slightly browned.
Or you can add 1 tablespoon of cooking oil to a large skillet and heat over medium-high heat. Add rolled taquitos and cook on each side until the taquitos are a light golden brown. I typically will “flash fry” 3 at a time.
Serve with desired toppings and Greek dip. Enjoy!

I am literally dying to give these a try! They look so good and I love chicken taquitos (and feta.. and olives). I’ll be dipping these in tzatziki! So good! <3
These sound really interesting, I think I will make up some tzatziki for a dipping sauce!
