I feel like they should have a crash course when you start back up in the school routine. The first few weeks feel like a head on collision that no one saw coming. Which is kind of ironic, since I have been doing the school thing for 10+ years now, but still every year I am blindsided.

That is why during the fall months I rely so heavily on my slow cooker.

I can just throw a whole bunch of ingredients in there, turn it on, and viola – dinner is served.

I especially love shredded chicken, and my kids completely love anything barbecue so you can imagine how many times that it ends up on our monthly menu.

The day I threw this all together was all by accident. I told my friend Jamie that I would bring pulled barbecue chicken to the pool. When I went to throw it all together I saw some veggies that I needed to get rid of asap before the fruit flies infested them, which was in a matter of minutes.

I added some peppers, onion, corn, salsa and black beans to make this not our typical barbecue chicken. Aiden, JoJo, and I loved it. Jamie’s girls all seemed to like it as well. There was only one persistent little foodie, Jersey, who was not willing to budge on eating it. After her “no-thank you” helping, she was done.

Now, while this meal is really just for the kids and I because Jake is “allergic” to all legumes, we will continue to make, eat, and love it. The best part of this meal is that leftovers freeze great! I just made it last night for my mother-in-law while she watches the kids in a couple of weeks.

How do you make this Slow Cooker Southwestern Barbecue Chicken?

In a slow cooker add barbecue sauce, salsa, green & red pepper, onion, and corn. Stir to mix together. Season the chicken breast with salt and pepper.

On top of the sauce, add the chicken breast.

Place the lid on top of the slow cooker and turn on high for 3-4 hours or low for 6-8 hours.

Once completely cooked, shred the chicken, return to slow cooker, and add black beans. Place on lid and cook for another 20-30 minutes.

Remove chicken from the slow cooker and make as a sandwich, taco, or use as a salad topping.

Great meal to freeze for later and makes fantastic leftovers. Enjoy!

Ingredients
 

  • 18 ounces barbecue sauce your choice
  • 1 cup salsa any kind
  • 1/2 green pepper diced
  • 1/2 red pepper diced
  • 1/2 medium purple onion diced
  • 1 cup frozen corn
  • 3 large boneless skinless chicken breasts
  • salt and pepper
  • 14.5 ounce can black beans rinsed and drained

Instructions
 

  • In a slow cooker add barbecue sauce, salsa, green & red pepper, onion, and corn. Stir to mix together. Season the chicken breast with salt and pepper.
  • On top of the sauce, add the chicken breast.
  • Place the lid on top of the slow cooker and turn on high for 3-4 hours or low for 6-8 hours.
  • Once completely cooked, shred the chicken, return to slow cooker, and add black beans. Place on lid and cook for another 20-30 minutes.
