My kids love rice, especially rice from our favorite Mexican restaurant or Chinese take-out. Literally, two of my kids will order just a side of rice with beans or load up on the rice when they get their favorite Chinese chicken. And it’s my little rice eaters that inspired this easy, tasty and ready-in-30-minutes meal.
While rice is usually known to be a side dish, in my family, that isn’t the case. I love it too, specifically fluffy white or brown rice. So serving fried rice proved to be an easy, pleasing meal for our family. My husband, who normally doesn’t touch sides, liked it as well, and didn’t notice the peas until after bite two; then he called me sneaky.
For this recipe, I wanted it to be a meal I could make in 30-minutes or less because it’s on those crazy- busy nights with the kids that we usually lean towards take-out. I wanted to create a homemade meal that would take the same amount of time it takes for take-out to arrive and it had to please all. This Sweet & Sour Chicken Fried Rice did just that. It was easy and delicious.
I used Minute® Rice because it is quick and easy to prepare and, I always have some on hand. What’s great with Minute® Rice is that the kids can help make it. Fluffing the rice at the end is my five-year-old son Cannon’s favorite job. It’s nice that you can have great-tasting, fluffy white rice in just 5 minutes with Minute® White Rice. How do you make Sweet & Sour Chicken Fried Rice?
In a large Mason jar or small mixing bowl, add all of the sauce ingredients and mix together, set aside until ready to use.
Prepare rice as directed.
Once fully cooked, set aside until ready to use.
Heat large skillet over medium-high heat and lightly oil with cooking spray.
Add eggs and continuously stir for 2-3 minutes or until softly scrambled.
Remove scrambled eggs from skillet and set aside.
Using the same skillet heat 2 tablespoons oil over medium-high heat; add onion, garlic, and red bell pepper, and stir-fry 3 minutes.
Add cooked chicken and peas; stir-fry 2 minutes.
Add cooked and stir-fry 1-2 minutes.
Quickly remix sauce and then add it to the skillet; stir-fry 4 to 5 minutes or until thoroughly heated and some of the rice feels seared from the pan.
Chop the scrambled eggs and stir into the rice, remove from heat.
Top with green onions and sliced almonds, if desired and serve.

Ingredients
Sweet & Sour Sauce
- 1 tablespoon rice vinegar
- 2 tablespoons soy sauce
- 4 tablespoons sugar
- 3 tablespoons ketchup
- 4 tablespoons apple cider vinegar
- 1 tablespoon sweet chili sauce
- 1/2 teaspoon granulated garlic or garlic powder
- salt to taste
Fried Rice
- 2 tablespoons oil
- 2 large eggs lightly beaten
- 1 cup yellow onion diced
- 3/4 cup bell pepper diced
- 2 cloves garlic minced
- 1 1/2 cups chopped cooked chicken I used a rotisserie chicken
- 1 cup frozen sweet green peas
- 3 cups cooked rice Minute® Brown Rice or Minute® White Rice
- chopped green onions optional
- sliced almonds optional
