Tomato Pepper Bruschetta is a simple, fresh, and flavorful recipe that comes together in minutes. Made with fresh tomatoes, bell peppers, basil, red onion, oil and seasonings. Whether you’re entertaining guests or looking for a quick and healthy bite, this easy recipe is always a crowd-pleaser.

This versatile recipe is delicious spooned over toasted bread for a classic bruschetta, but it’s also fantastic tossed with pasta, added to salads, layered on pizza, or served as a dip with crackers and chips.

I created this recipe earlier this summer after finding myself with extra bell peppers in the fridge from a fajita night. They never made it to the skillet, and I wanted to use them in something fresh and flavorful – similar to pico de gallo, but with its own unique twist. After a little experimenting, this Tomato Pepper Bruschetta quickly became a new favorite.

In fact, I’ve been making it on repeat for the last few weeks. I love it in the morning with eggs and toast, for lunch piled over shredded cabbage, or as a simple dinner served with toasted bread, fresh burrata, or cottage cheese. It’s one of those recipes that’s so fresh and versatile, you’ll find yourself looking for new ways to enjoy it every day.

A few Christmases ago, my sister asked for a vegetable chopper, so I bought one for her and one for myself too. It’s become one of my favorite kitchen tools because it quickly chops vegetables into uniform pieces, making prep easier and giving dishes like this a beautiful presentation.

If you don’t already have a vegetable chopper, it’s definitely worth checking out. Of course, you can always go the old-fashioned route and chop everything by hand. It may add a little extra prep time, but the bruschetta will still be just as fresh and delicious.

Sandra’s Recipe Tips

  • You can use any combination of bell peppers in this recipe, including red, yellow, orange, or green. I prefer using the sweeter red, yellow, and orange varieties, as green peppers tend to have a slightly more bitter flavor that can overpower the fresh taste of the bruschetta.
  • I use avocado oil in this recipe, but you can easily sub that for extra-virgin olive oil.
  • If you don’t have fresh garlic on hand, season with garlic powder, that will work as well.
  • Adjust the lemon juice to your preference, I love the balance it brings to this dish. It doesn’t over power it, just offers a great balance to the oil.

Ingredients
 

  • 1 1/2 lbs diced cherry or marzano tomatoes
  • 1 red bell pepper can use orange as well
  • 1 yellow bell pepper
  • 2 cups diced red onion
  • 1 1/4 cups fresh basil, chopped
  • 2 tablespoons avocado oil
  • 3 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • salt & pepper to taste

Instructions
 

  • In a large bowl, combine the diced tomatoes, peppers, onions, and basil. Drizzle with olive oil and lemon juice, then toss until everything is evenly coated. Season with salt and pepper to taste and stir once more. Serve immediately, or refrigerate in an airtight container until ready to enjoy.
