I created this recipe earlier this summer after finding myself with extra bell peppers in the fridge from a fajita night. They never made it to the skillet, and I wanted to use them in something fresh and flavorful – similar to pico de gallo, but with its own unique twist. After a little experimenting, this Tomato Pepper Bruschetta quickly became a new favorite.

In fact, I’ve been making it on repeat for the last few weeks. I love it in the morning with eggs and toast, for lunch piled over shredded cabbage, or as a simple dinner served with toasted bread, fresh burrata, or cottage cheese. It’s one of those recipes that’s so fresh and versatile, you’ll find yourself looking for new ways to enjoy it every day.
A few Christmases ago, my sister asked for a vegetable chopper, so I bought one for her and one for myself too. It’s become one of my favorite kitchen tools because it quickly chops vegetables into uniform pieces, making prep easier and giving dishes like this a beautiful presentation.

If you don’t already have a vegetable chopper, it’s definitely worth checking out. Of course, you can always go the old-fashioned route and chop everything by hand. It may add a little extra prep time, but the bruschetta will still be just as fresh and delicious.

Tomato Pepper Bruschetta

Ingredients
- 1 1/2 lbs diced cherry or marzano tomatoes
- 1 red bell pepper can use orange as well
- 1 yellow bell pepper
- 2 cups diced red onion
- 1 1/4 cups fresh basil, chopped
- 2 tablespoons avocado oil
- 3 tablespoons lemon juice
- 1 tablespoon minced garlic
- salt & pepper to taste
Instructions
- In a large bowl, combine the diced tomatoes, peppers, onions, and basil. Drizzle with olive oil and lemon juice, then toss until everything is evenly coated. Season with salt and pepper to taste and stir once more. Serve immediately, or refrigerate in an airtight container until ready to enjoy.
