30-Minute One Pot Cheesy Pasta is hands down the best. The layers of cheesy flavor is unbeatable. This dish will quickly become a family favorite.
Today, I am feeling on top of the world. I am sharing a recipe that we have been trying to replicate since eating at Jay’s Bistro, a restaurant here in Fort Collins, 7 years ago. Yes, this recipe has been 7 years in the making.
My intention when I started this “mac & cheese” recipe wasn’t to copycat, but when I tried it I screamed, “I got it!” I have tried this recipe out before, but I used chicken stock and ruined it because it tasted like chicken. In the end it was okay because it made the best ever Four Cheese Chicken Pasta Bake. But it wasn’t what I wanted.
All we knew about this pasta were the four cheeses: mascarpone, Gouda, white cheddar and Parmesan. I have been making pasta dishes with those cheeses ever since and never came out with the right combo. That was until this 30-Minute One Pot Cheesy Pasta.
My daughter Jojo devoured every last bite. I can neither confirm, nor deny, that I may or may not have took a few {too many} “taste testers”.

How do I make 30-Minute One Pot Cheesy Pasta?
Cook pasta package directions. Strain and rinse with cold water, set aside.
In the same pot, melt 4 tablespoons butter over medium-high heat.
Gradually whisk in the flour and cook for 2 minutes, making sure to stir occasionally.
Reduce the heat to low and slowly whisk in the milk, cornstarch, evaporated milk, Dijon mustard, and remaining spices.
Once everything is combined increase heat to medium-high and bring to a boil, whisking constantly.
Once brought to a boil, reduce heat to medium and let it simmer 4-5 minutes or until thickened.
Remove from heat and whisk in Parmigiano-Reggiano, Gouda cheese, sharp white cheddar cheese, and mascarpone cheese until melted and smooth.
Add pasta and stir to combine, making sure all of the noodles are evenly coated.
Top with optional toppings if desired. Serve immediately, and enjoy!

- 16 ounces pasta shells

- 4 cups half-and-half or milk
- 1 tablespoon cornstarch

- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 cup grated Parmigiano-Reggiano
- 1 cup grated Gouda cheese
- 1 cup grated sharp white cheddar cheese
- 6 ounces mascarpone cheese
Optional Toppings
- fresh parsley optional
- grated Parmesan cheese

Help! I’m planning to make this tonight, and I’m confused! There is no evaporated milk, in the list of ingredients, but, in the instructions, you tell us to add the evaporated milk. Huh?
