Easy Chicken Skillet Recipe
This quick 20-minute dinner recipe is perfect for weeknight dinners or lunch. You can also make it ahead for meal prep. I love portioning it out into containers so I have an easy meal when I want to stay on track.
The flavors are simple but pack a fresh punch. The tender chicken is delicious with sweet cherry tomatoes, garlic, shallots, spinach, and a touch of butter and olive oil.
Sometimes I add crumbled feta cheese or cubes of fresh mozzarella just before serving it. My family loves some shaved Parmesan. A drizzle of balsamic glaze is always nice, too.
Ingredients
- Butter
- Olive oil
- Boneless skinless chicken breasts cut into 1″ pieces
- Minced shallot
- Minced garlic
- Cherry tomatoes or grape tomatoes
- Fresh spinach
- Salt and black pepper
- Crumbled feta cheese, cubed fresh mozzarella, or shaved Parmesan cheese for serving (optional)
Season the chicken with salt and pepper. Cook the chicken in olive oil and butter in a large skillet. Once it’s cooked through, remove it from the pan.

Add more butter and oil to the pan. Add the shallot, garlic, and tomatoes and cook them until the shallot is softened.

Add the spinach along with salt and pepper and cook the spinach until it wilts.

Add the cooked chicken back to the pan and stir to combine. At this point, feel free to add cheese, such as feta, mozzarella, or Parmesan.
