This apple pie recipe stems from one of my cutest requests. Back in 2013, Gabbie, one of our sweet little friends (I used to watch her in my home daycare) wanted apple pie because she is learning about apples at preschool. I couldn’t resist the request.

With her assistance, we made the crust (now I use a shortcut premade crust), and when we started the filling, she asked what my special and secret ingredient was; this is something I always told the kids at lunch when they were little to get them to eat, especially if it was something green and leafy.
I would ask them if they could taste the special secret ingredient. I told her we would add maple syrup and it would taste like a warm Christmas morning.

There are a few steps to make the perfect apple pie, but the first is the most important. I much prefer homemade crust, but I will be honest: I rarely add extra time for that. And now, I will go store-bought; only Christmas and Thanksgiving are the two times a year I will splurge and make my crust from scratch.
If you have the extra time, the step to make your crust is added; if you go store-bought, just skip that step.

Make your filling
Preheat the oven to 350 degrees F (175 degrees C).
Place sliced apples in a large bowl. Mix sugar, cinnamon, maple syrup, and flour in a small bowl. Stir well and pour the mixture over the apples. Cut half of the butter or margarine into small pieces and add to the apples. Toss apples until thoroughly coated.

Pour apples into a pastry-lined pie pan—dot apples with the rest of the butter or margarine. Place the second pastry on top. Seal edges and cut steam vents in the top crust.
Glaze the top with the egg wash and sprinkle with vanilla spiced sprinkles – if you don’t have these, you can top with sugar mixed with a bit of cinnamon.
Bake in preheated oven for 45 to 55 minutes until the crust is golden brown.

Ingredients
- 6-8 Granny Smith apples – peeled cored and sliced, I use my Mandolin slicer
- 1/4 cup white sugar
- 1/4 cup dark brown sugar
- 1/4 cup maple syrup
- 2 teaspoons ground cinnamon
- 2 tablespoons all-purpose flour
- 3 tablespoons butter
Egg Wash
- 3 tablespoons milk
- 1 egg
Crust (or use 2 premade pastry shells)
- 4 cups all-purpose flour
- 1 3/4 cups shortening
- 3 tablespoons white sugar
- 1 egg
- 1/2 cup water
Instructions
Crust
- Mix together flour and sugar. Cut shortening into flour until it resembles coarse crumbs. Stir in egg. Slowly pour in water while mixing until the dough sticks together. Place in fridge for an hour, then roll out into 2 8-inch disks. Spread in pie pan. You can also use 2 premade pastry sheets to make this faster.

I’m going to try this tonight! I noticed you don’t pre-cook the apples; I hear some people insist that’s necessary and others say it’s not. I’ve never pre-cooked apples, and my pies always end up with a lot of liquid and a gap between the filling and top crust.
