This poppy seed bundt cake is incredibly delicious, fluffy, and light. It is the perfect dessert or an insanely yummy breakfast. Who said you couldn’t have cake for breakfast?

My son Madden loves lemon poppy seed cake, muffins, cupcakes, cookies – anything with poppy seeds and lemon.
He asked me to make a lemon poppy seed cake one afternoon, but sadly, I didn’t have any lemons in the houseโno juice or fruit. So I decided to whip up my friend Kelin’s Poppy Seed Cake, which is so easy to make and requires only a few ingredients.

This Poppy Seed Cake is so quick and easy to make that the kids can do it.
What is fun about this recipe is that it can be made in many different versions and is simple to adapt.
Bundt Cakes are my favorite cakes to make. I think it is because I have the best memories of my mom making them. My dad loves her triple chocolate cake, which she always made in a bundt pan.

I love making foods that my kids love, and since I have a little one who loves poppy seeds, I need to make all of his wishes come true. That he asks for a lemon poppy seed cake every birthday makes me so happy.

I love his dimple. He wasn’t born with it; instead, when he was two years old, my oldest Aiden was teaching Jordan and Madden some karate moves. As Aiden was demonstrating a kick on a pillow that Madden was holding, Madden fell back and hit the corner of our brick fireplace, causing his tooth to almost go all the way through his cheek, creating this adorably cute dimple.

Poppy Seed Cake

Ingredients
- 1 yellow cake mix
- 1 box instant vanilla pudding small box
- 4 eggs
- 1/2 cup canola oil
- 1/4 cup poppy seeds
- 1 cup warm water
- 1 1/2 teaspoons almond extract
Glaze
- 1/4 cup butter melted
- 2 cups powdered sugar
- 2 tablespoons milk upto 4 tablespoons
- 1 teaspoon almond extract
- 1 teaspoon poppy seeds
Instructions
- Mix together all ingredients until well combined. Pour into greased bundt pan.
- Bake at 350F for 40-50 minutes or until golden brown. Cool.Turn onto platter and sprinkle powdered sugar or make glaze.
Glaze
- Melt 1/4 cup butter.Sift 2 cups of powdered sugar into a medium-size bowl.
- Add the melted butter and milk to the powdered sugar and vigorously stir. Then add the 1 1/2 teaspoons of almond extract and poppy seeds and mix until well combined.
- Add more milk if desired to get the consistency you want.Drizzle the glaze over the cake.

My kids will be happy when I hand them a slice of this for breakfast!
