These 2-Ingredient Pumpkin Cookies are easy to make and delicious.

Not only are these spice cake mix cookies soft and chewy, they’re also packed with pumpkin spice flavor! And the best part? They require only one bowl and 2 ingredients to make!

Finally, it is officially pumpkin season, and to celebrate the occasion, I’m sharing my newest pumpkin recipe! I love making cake mix cookies since I was a kit.

Cake mix cookies require only a few ingredients, about 5 minutes to mix up the batter and the clean-up is simple & quick just one bowl. So I decided to try spice cake mix cookies with pumpkin to make this incredibly easy recipe.

This recipe for 2-Ingredient Pumpkin Cookies is simple, just stir together the batter, drop spoonfuls on a cookie sheet, and bake. It’s really that easy friends!

How to make 2-Ingredient Pumpkin Cookies

Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Gather your ingredients.

In a large bowl, mix the cake batter and pumpkin puree together until combined.

Then use a spoon to drop rounded amounts onto the cookie sheets lined with parchment paper.

Bake the cookies in the preheated oven until centers are set, 13 to 15 minutes. Let them cool on the baking sheets for 5 minutes before transferring to a wire rack so they can cool completely.

Recipe Tips

  • What if I don’t have a spice cake mix?
    That’s okay! Use a white cake mix and add pumpkin spice seasoning to taste, I would start with about 1/2 teaspoon and work my way up from there, knowing my family, we would use about 1 1/2 teaspoons. You can also use a yellow cake mix, but this may be overly sweet.
  • How do these cookies bake up?
    These cookies, will bake and come out exactly how they look when you scoop the dough onto the pan. So if you don’t want a little “pillow” like cookies, just take a butter knife and just swirl and press gently down on the cookies to make them a bit flatter. But the dough is sticky, so be gentle. You can also use a fork like you would for a peanut butter cookie.
  • What is the texture of these cookies?
    I would say they remind me more of a soft muffin than a cookie, but they are easy to assemble and make a great snack or breakfast treat.

    Just made these I didn’t have a slice cake mix so I substituted a vanilla cake and added all the spices like ginger, nutmeg, all spice and clove
    Plus a sprinkle of chocolate chips!

  3. Please change “cake batter” to ” cake MIX”. It said “batter” so I made the batter according to the box and added the pumpkin. Needless to say, I made a pumpkin spice cake, not cookies. (This might be what happened to Caro.)

    1. Changed that, thank you for the suggestion. Although, I would hope the detailed pictures of the recipe, step by step photos and all the suggestions in the post would make it more clear.

    I have made these several times and always a hit. I do add a bit more pumpkin pie spice for added flavor. Great for a quick breakfast snack on the go too!

  5. I used a similar recipe that I can’t find now. it was just 100% pumpkin puree and Betty crocker chocolate chip cookie mix, mixed together and baked 350° for 20 min in an 8*8 pan. any idea why these turned out with a thick whipped cream texture, I stead of a cake texture?

    1. Well, these are cookies and not cake – so I am not sure. I haven’t seen that recipe around, but if I do, I will come back here and share the link with you.
