I love salads during the summer. On the hot days, you can eat fresh greens and not feel weighed down. On cool evenings, it is nice to sit outside and enjoy a salad dressed in some of your favorite toppings. And donโt forget that any type of salad works well to feed a crowd.
This summer we have had plenty of salads. Easy to make, you donโt heat up the house and well I never feel like I overate, even if I eat the whole bowl by myself (guilty). This Chicken & Spinach Salad with Lemon Vinaigrette is full of flavor from the vinaigrette, roasted tomatoes, and goat cheese, then have a crunch from the walnuts. And the sunflower sprouts give it a special touch.
Not only have we been eating greens like they are in style, (which they are) but we have been obsessed with a new frozen treat. Outshine Bars are a perfect summertime treat any time of the day. We love having them poolside, at my kids’ baseball games, or a sweet ending to a meal.
We found the Outshine Simply Yogurt Bars at Walmart before my daughterโs baseball game. While she was with her team warming up for the game, the rest of us went to grab a treat to cool down in the 90+ heat.
We grabbed a box of the Strawberry Outshine Simply Yogurt Bars and Strawberry Outshine Fruit Bars and loved them. Since then I have loaded up the freezer with these satisfying and delicious bars. My family just loves them. The Pineapple Fruit Bar and Coconut Water Bars were are recent tries and we still havenโt found an Outshine Bars that we didnโt like.
So while the theme for summer meals has been salad in a variety of ways, I would say out summer snack theme would be โshine brighterโ with Outshine Bars. And with a variety to choose from you will never be short of options. So cool down and satisfy your summer cravings with this Chicken & Spinach Salad and an Outshine Simply Yogurt Bars (my favorite). How do you make Chicken & Spinach Salad with Lemon Vinaigrette?
Need a great topping for the salad, make these Italian Herb Biscuits to serve on the side, or to chop up into croutons.
Make the vinaigrette by mixing together lemon juice, olive oil, honey, garlic, shallots and salt in a small Mason jar or bowl. Set in the fridge to chill until ready to serve.
Mix all of the greens above together in a large salad or serving bowl.
Top with chopped walnuts, chicken and roasted tomatoes.
Toss with about 3/4 of the vinaigrette that you had prepared earlier. Top with seasoning and crumbled goat cheese and gently toss.
Add remaining dressing, by lightly drizzling it over the salad and goat cheese.
Serve immediately or set in the fridge until ready to serve, up to 1 hour before.

Ingredients
- 6 ounces baby spinach
- 1 head red lettuce coarsely chopped
- 2 cups micro-greens I used sunflower sprouts
- 1 cup roasted tomatoes chopped & chilled
- 1/2 cup chopped walnuts
- 4 ounces goat cheese crumbled
- 2 cups diced chicken cooked & seasoned
- 1 tablespoons seasoning Italian or Sicilian
Lemon Vinaigrette
- 1/3 fresh lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 3 garlic cloves minced
- 1/2 teaspoon salt
- 2 teaspoons finely diced shallots
- season with pepper to taste optional
