Decadent Chocolate Flourless Cake with Red Velvet Mousse is a rich & creamy dessert. It’s perfect for all chocolate lovers, even those who are gluten-free!

Valentines is all about the chocolate, well for most people that is. Chocolate and flowers. I am different! EVERY DAY is about chocolate. Chocolate milk, chocolate candy, chocolate cake, chocolate chip pancakes, chocolate mints; any meal, any time of the day, I can and will serve chocolate.

This chocolate flourless cake is my absolute favorite! It is rich, decadent and creamy. Fresh whipped cream or mousse is my favorite way to garnish this luxurious cake. But since it is Valentine’s Day, red velvet seemed too perfect. And it is!

How do you make Decadent Chocolate Flourless Cake with Red Velvet Mousse?

Preheat oven to 300 degrees F (150 degrees C). Grease one 10 inch round cake pan and set aside.

In a small saucepan over medium heat combine the water, salt, and sugar. Stir until completely dissolved and set aside.

Melt the bittersweet chocolate in a double boiler or microwave. Pour the chocolate into an electric mixer.

Cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time. Beat in the hot sugar-water. Slowly beat in the eggs, one at a time.

Pour the batter into the prepared pan. Place pan in a deep roasting pan. Put in heated oven and pour water into roasting pan until it reaches halfway up the cake pan.

Bake cake in the water bath at 300 degrees F (150 degrees C) for 45 minutes. The center will still look wet. Chill cake overnight in the pan. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.

If you plan to serve this at a party, buying little tiny serving cups works well! I bought these at Party America and just pressed them into the cake like you would with a cookie cutter and then wiped down the side with a wet cloth. Lastly topping with the red velvet mousse. I used a large star tip to make it look pretty. Easy and simple to serve and to clean up!

Melt chocolate in a medium bowl in microwave on high for 1 minute. Stir and then microwave for 30 seconds. Repeat until chocolate is smooth and melted.Â

Add 1/4 cup cream; stir until smooth. Stir in food color and vanilla. Let stand 10 minutes to cool slightly.

Beat 2 cups cream and granulated sugar in large bowl with electric mixer on medium speed until stiff peaks form. Gently fold in 1/2 of the chocolate mixture until well blended, then fold in remaining chocolate. Cover and refrigerate until ready to serve. Spoon onto cake before serving or use a piping bag to pipe onto slices.
