This recipe is completely dedicated to my husband who loves asparagus and it is about the only vegetable he will eat. {Not kidding.} I was never a big fan as I didn’t grow up eating it mainly because it is so darn expensive. Well, let’s just say my husband has expensive taste when it comes to food.
When we got married, and I quickly realized he wasn’t kidding when he said he never eats vegetables, I knew I would have to start serving a lot of roasted asparagus and green salads with homemade ranch dressing.
Otherwise, Jake would live off red meat. He loves shrimp and chicken thighs, too, but I think he would eat a ribeye every night if it weren’t for his high cholesterol.
I have grown to love asparagus, especially if it is served with garlic and parmesan cheese. Our kids have a love-hate relationship with asparagus. They love that we typically serve it with cheese but they hate eating the tips. And this fact I can’t wrap my head around. We make them eat the entire thing, including the tips but all 4 out of 5 of them gag throughout the process.
Easy Roasted Asparagus
This is a great side dish recipe whether you’re making a quick weeknight meal or a fancy holiday dinner. The combination of Parmesan cheese and garlic is really delicious!
It’s quick, easy, and ready in about 20 minutes, which is always a winner in my book.

Ingredients
- Fresh asparagus
- Olive oil
- Minced garlic
- Salt and pepper
- Lemon juice
How to Roast Asparagus
Place the asparagus in a mixing bowl and drizzle them with the olive oil. Toss to coat the spears and then sprinkle the Parmesan cheese, garlic, salt, and pepper over the top and toss to coat again.
Arrange the asparagus on a baking sheet in a single layer. Bake them at 425°F for six minutes and then turn them over and cook them for another six to nine minutes or until they are tender.
Squeeze fresh lemon juice over the top of the garlic asparagus before serving.
Tips
If your asparagus have tough ends, trim them first by either breaking them where they naturally bend and break or with a knife.
Be sure to arrange them in a single layer on the baking sheet. If you crowd the pan, they won’t cook evenly and will steam instead of roast.
The cooking time will vary depending on how thick your asparagus are. Be sure to keep an eye on them while the cook. They are ready when they are tender but with a slightly crisp bite. If you overcook them they will be mushy.

Easy Oven Roasted Garlic Asparagus
Ingredients
- 2 lbs. fresh asparagus
- olive oil
- minced garlic
- salt & pepper
- 1 lemon
Instructions
- Preheat oven to 425 degrees.
- Place the asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with Parmesan cheese, garlic, salt, and pepper & toss to coat again.
- Then arrange the asparagus onto a baking sheet in a single layer {very important for proper cooking}.
- Bake in the preheated oven for 6 minutes then rotate the asparagus to cook on the other side and cooking for another 6-9 minutes {cooking time varies on the thickness}. Once cooked to tender, sprinkle with lemon juice right before serving.
