St. Louis Veggie Dip

Now, you may ask yourself, “Why is it called St. Louis Veggie Dip?” I wondered this as well. This recipe came from my friend, Kelin, aka “Master Chef”. Kelin is one of those people who can throw things together in the kitchen and it just works.

Kelin has lived near me for years, and I still love the cookbook she gave me when we first met. When I made this recipe, I sent her a message asking her why she named this dip after St. Louis. She wrote me back that she got this recipe from her Aunt Sue and Aunt Sue is from St. Louis. And her Aunt Sue just always called it that.

Well, thank you, Aunt Sue. Really I am not a huge dip person, well let me correct that. I am not a big veggie dip person, I would rather eat them plain. My husband, well, he is a ranch addict, but otherwise, he doesn’t care for veggie dips as well, and we both LOVE this dip.

When I read the directions that this dip had to sit for a day, yes, a whole day! I was bummed I wanted it right away, but I tasted it and thought, hmmm, I would expect more flavor from the onion and green peppers. Well, a day later, the flavors of all the ingredients popped, and this dip was terrific.
