Okay sorry, I just need to freak out a bit. Because this recipe for Simple Peach Pies has been the best idea I have ever, ever came up with. Sorry, I hate saying stuff like that. But I love these things and they are so easy! And bonus- fewer calories than a normal pie too!

I thought of this idea because my son Cannon is literally obsessed with peaches. He has like 3 a day. And he will only eat fresh peaches (thank goodness). In fact, he tried canned peaches this week after he saw them in my parent’s pantry and he tried them and was like, “these aren’t real peaches”. He is kind of accurate. I love freshly canned peaches, but who has time to make those. Wait, there are some that do. If you are one of those people, will you send me a batch? Seriously, I’ll pay.

Anyway, I was trying to think of a fun way to present peaches for dessert and I saw in the fridge leftover pie dough and that is what lead to this stroke of genius. Okay, I’ll stop. But I usually hate peach pies, peaches aren’t my favorite fruit, but now that has all changed. I love, love, love peach pie now. I CAN NOT WAIT FOR YOU TO TRY THESE Simple Peach Pies. Sorry for the yelling, but you seriously need to try this now.

How do you make Simple Peach Pies?

Cut peaches in half and remove seed.

Preheat oven to 350 degrees, and line a baking sheet with parchment paper.

Cut pie crust into 8 squares.

Set the 8 halves center side up on prepared baking sheet.

In a small bowl mix together brown sugar, sugar, and cinnamon.

Sprinkle 1 tablespoon of the sugar and cinnamon mixture over each peach half. Top sugar with ½ tablespoon of butter. Top with one of the pie crust squares. Depending on the size of our peach you may need to cut down the dough a bit, you just want it to slightly hang over the top of the peach.

Bake in preheated oven for 20 minutes. Remove from oven and top each of the pie with melted butter and sprinkle sugar on top. Place back in oven and bake for another 10 minutes.

Remove from oven store at room temp until ready to serve or serve immediately with whipped cream or ice cream.

I love them hot, but they are fantastic at room temperature as well. Enjoy!

Ingredients
 

  • 4 fresh peaches cut in half & seed removed
  • 4 tablespoons butter
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 1 Pillsbury refrigerated pie crust

Toppings

  • 1 tablespoon butter melted
  • 1 tablespoon sugar
  • whipped cream or ice cream

Instructions
