You Monster Cookie lovers will agree that this is better than the original. This recipe is chewier and softer without the flour, and the peanut butter and oats are the stars. This recipe has all of my favorite ingredientsโ€”honey, peanut butter, oats, and M&Mโ€™sโ€”and not many moreโ€”drooling!

My sister Tami and I are completely and utterly obsessed with this Gluten-Free Peanut Butter Cookie. It is so soft and chewy, and the peanut butter is the star; there is nothing extra to distract from the fantastic peanut butter flavor. It is the same with this cookie; the main ingredients shine.

Flourless Monster Cookies are our family’s go-to cookie for almost anything: camping, after-school snacks, pool trips, or vacations.

It’s not just the baked cookie that is delicious; the cookie dough is the most addictive and tasty part. You will catch me eating the dough right from the mixing bowl.

They are also gluten-free, making them an excellent option for those with dietary restrictions or preferences. But don’t let that fool you; all love these cookies and will have everyone returning for more.

Sandra’s Tips

  • If you don’t have honey on hand, you can substitute with maple syrup or agave syrup for a similar effect or just omit.
  • Feel free to add other mix-ins such as raisins, nuts, or dried cranberries for a different twist on these delicious cookies.
  • Don’t overmix the dough, as this can result in tough cookies. Mix until just combined, then gently fold in the M&M’s and chocolate chips.

Beyond being delicious and accommodating to dietary needs, these Flourless Monster Cookies offer a fun twist on the classic oatmeal chocolate chip cookie. The addition of peanut butter not only adds depth of flavor but also creates a softer texture that melts in your mouth with each bite. And let’s not forget about the oats! Not only do they add a heartiness to the cookies.

This is my favorite cookie recipe. I substitute dark chocolate chips for the M&Ms and reduce the brown sugar to 3/4c. So good!

The sweetness is just right, not overpowering but definiely indulgent. I shared them with friends, and they were gone in minutes, with everyone asking for the recipe.

What I love about these is that the ingredients used to make them flourless kind of turn them into a three way hybrid of a monster cookie, an oatmeal cookie, and a peanut butter cookie. It’s so good.
