This hearty slow cooker Tortellini Soup is one of our family’s favorite recipes. It’s not only delicious but also simple to make! You’ll be amazed at how quickly it all comes together.

This tortellini soup is the perfect comfort meal and enough to serve our large family or the best leftovers.

There’s something about soup during the fall and winter months that I love. This slow cooker soup is not only easy but incredibly delicious.

While I prefer tomato soup, while my children love anything with oodles of cheese. This Slow Cooker Tuscan Tortellini Soup is a hearty combination of both our favorite flavors.

Besides the appetizing dark red color, my favorite thing about this Slow Cooker Tuscan Tortellini Soup is that I can cook it in a crock-pot. To make this dish, simply add all ingredients to the pot and let simmer.

We completed our meal with some freshly grated parmesan cheese, pepper, and had an excellent dinner.

We made too much of this soup recipe and had to give some leftovers to a friend. They texted us the next day saying how great it was.

How to store leftover soup

  • How long can you keep tortellini soup in the fridge?
    Store this Tortellini Soup in an airtight container for up to 5 days. When you’re ready to eat it, heat it up on the stovetop or in the microwave.
  • Can I freeze tortellini soup?
    If you would like to save this soup for a later date, follow these instructions. First, let the soup cool before adding the tortellini. Next, find an appropriate freezer bag or container and seal it shut after getting rid of any extra air inside. You can keep the frozen tortellini next to the soup so they will be together when you’re ready to reheat and consume it.

    While I don’t recommend freezing this soup after it has been made. With that said, if you needed to, I would use only one package of cheese tortellini, so that you have more broth (the most delicious part!)

Ingredients
 

  • 3 28 ounce cans crushed tomatoes
  • 6 cups chicken broth if you like a less salty soup, use low sodium
  • 1 yellow onion finely chopped
  • 1 1/2 pounds sweet or spicy Italian sausage
  • 2 tablespoons garlic minced
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons salt to taste, I use 1 teaspoon
  • 1 teaspoon crushed red pepper
  • 2 tablespoons Italian seasoning
  • 1/2 teaspoon black pepper
  • 2 cup kale roughly chopped
  • 1 cup heavy cream or half-n-half milk would work too
  • 1 cup grated parmesan cheese plus more for topping
  • 20 ounce package refrigerated Cheese Tortellini or 2 – 9 ounce packages

Instructions
 

  • In a large pan add sausage, onion, and garlic. Roughly chop while the sausage is cooking and cook over medium-high heat until the sausage is completely cooked through; about 8-10 minutes. 
  • Once sausage is cooked remove from heat and drain excess grease if you desire.
  • In a 6 qt. slow cooker add chicken broth, crushed tomatoes, cooked sausage and all of the seasonings.
  • Add lid onto slow cooker and cook on high for 2-3 hours or low 4-5.
  • Add heavy cream, shredded parmesan cheese, and tortellini and cook for another 20 minutes.
  • Then add chopped kale and cook another 10 minutes.
  • Once cooked, serve and garnish with more cheese if you so desire.

      1. I just made this using tomatoes from my garden. I used 12 Roman and 12 early girl. Tomato’s. I cut them in pieces and crushed them. 1 hour into cooking in the crock pot. On low. It smells so good. Next time I’m going to roast the tomatoes first. I always roast my tomatoes before adding to a recipe. Not sure why I forgot. I do not have any kale, so I’m just going to add a cup of purple basil from my garden. I can’t wait for this to be done cooking.

    This was absolutely DELISH!! I added a combination of Sweet & Hot Sausage and included 2 Packages of the Cheese Tortellini. I couldnt find that brand but subbed with a 5 cheese tortellini. It turned out sooo good, my crockpot was filled to the brim. It was just as good the next day! Will be making this again soon:) Thanks for the recipe!

  2. Hi I would like to make this for our church potluck. If I make it the night before, is it ok to add all ingredients, keep it in the fridge and put it on low the next day, until everything heats up? If so, how long do you think it will take?

  3. I’m a bit confused about the cheese.. Both shredded and grated are mentioned but not both in listed ingredients. Do you put a cup of shredded or grated in the soup?

    1. Hi Dana! You can use either one, we just use whatever we have on hand or if we’re using a fresh block we finely shred it so it melts faster! Hope this helps.

    This soup is amazing! My husband would be thrilled if I made it once a week! It makes a ton so before adding the creamer, kale and tortellini I always take half out to freeze. We still get two nights out of the half I leave in, and I have an easy dinner ready to go for another time. (Just let it thaw for several hours and put it in the crockpot, or a dutch oven, to heat then add the other items as usual.) Serve it with crusty buttered bread and it is perfection! Thanks for this new favorite recipe!!

    This is a great recipe taste wise!!! , but I think it needs to be halved, there was no way I could get 6 cups of broth and 3 large (28 oz), cans of crushed tomatoes, in my slow cooker, plus the other ingredients, and I have a 6 qt slow cooker, I ended up having to remove quiet a bit of the ingredients before turning the slow cooker on just knowing that I still had the cream and kale and tortellini to add at the end, there was no way that was going to happen, and it was still up to the very top with no room to even stir it…I think I’ll try this again but will half the recipe…

    Hi Jenn,
    I made this last night and it was exactly as I hoped it would be. Very easy to make and was very flavourful and warming on a cold Canadian winter’s night. For those who might be interested, just above the ingredients lists, where it reads “Servings 12” click on the 12 and you can reduce the servings and then the ingredient list changes. I changed it to 4 servings and that was the perfect amount for my husband and I. The measurements came out to .67 etc. so I put all spices to 1/2 tsp. cheese and cream to 1/3 cup and 1 can tomatoes and 2 cups broth and used 3 sausage links. I will definitely make this again. REALLY good recipe! Well done!

    I just made this soup today. It’s outstanding! It’s such a great meal on a cold, winter night in Southeastern Kentucky’. I halved the recipe, just in case it wasn’t great. Also, since I was home for the day, I did it on the stove instead of crockpot. I used the same recipe, just keeping temperatures low like in crockpot.
    Next time, I’ll do the whole recipe. It’s delicious. Thank you!

  9. Like others have said it’s way too much liquid for a 6 quart crockpot. I put the canned tomatoes in first and it was already 3/4 full. Only used 4 cups of broth and now it’s to the brim. I’m still gonna let it cook but I’m gonna have to dump all this in my Dutch oven to finish cooking it since there’s no way pasta and cream are going to fit. It looks and smells delicious though! Next time, use only half the amount of liquid and it will turn out fine

    1. Hi Courtney! We do not have an Instant Pot and haven’t tested the recipe in one, so we can’t say for sure how to adjust it. If you give it a try be sure to let us know how it goes!

        I made this last night along with a Dutch oven crusty bread. Yum!! The soup was delicious. I followed the recipe to a T and would not change a thing. The broth was very flavorful and good ratio of broth to tortellini. I even had my guy eating kale!! This recipe is a keeper!!!

    This is in the crock pot now. I’m so worried bc I jumped ahead and added in the kale and the cream right away instead of adding late. Think it will turn out ok?
