While I prefer tomato soup, while my children love anything with oodles of cheese. This Slow Cooker Tuscan Tortellini Soup is a hearty combination of both our favorite flavors.

Besides the appetizing dark red color, my favorite thing about this Slow Cooker Tuscan Tortellini Soup is that I can cook it in a crock-pot. To make this dish, simply add all ingredients to the pot and let simmer.
We completed our meal with some freshly grated parmesan cheese, pepper, and had an excellent dinner.

Slow Cooker Tuscan Tortellini Soup

Ingredients
- 3 28 ounce cans crushed tomatoes
- 6 cups chicken broth if you like a less salty soup, use low sodium
- 1 yellow onion finely chopped
- 1 1/2 pounds sweet or spicy Italian sausage
- 2 tablespoons garlic minced
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 2 teaspoons salt to taste, I use 1 teaspoon
- 1 teaspoon crushed red pepper
- 2 tablespoons Italian seasoning
- 1/2 teaspoon black pepper
- 2 cup kale roughly chopped
- 1 cup heavy cream or half-n-half milk would work too
- 1 cup grated parmesan cheese plus more for topping
- 20 ounce package refrigerated Cheese Tortellini or 2 – 9 ounce packages
Instructions
- In a large pan add sausage, onion, and garlic. Roughly chop while the sausage is cooking and cook over medium-high heat until the sausage is completely cooked through; about 8-10 minutes.
- Once sausage is cooked remove from heat and drain excess grease if you desire.
- In a 6 qt. slow cooker add chicken broth, crushed tomatoes, cooked sausage and all of the seasonings.
- Add lid onto slow cooker and cook on high for 2-3 hours or low 4-5.
- Add heavy cream, shredded parmesan cheese, and tortellini and cook for another 20 minutes.
- Then add chopped kale and cook another 10 minutes.
- Once cooked, serve and garnish with more cheese if you so desire.

This is my 3rd time making this, but today my sauce seems thick. I used the guide to reduce the servings down to 4 people. Anyhow, should it be more on the thicker side than thinner and can / should I add a bit more broth to thin it out a bit? Thoughts?
Hi! It may be that it cooked faster than the recipe specifies because of the difference in volume. You can add a little more broth and adjust seasonings as you’d like to thin it out a bit, and next time try shortening the cooking time to see if that helps.

Is this dried tortalini or refrigeratored?
This was made with refrigerated, but if you only have dried that should work too! Just adjust the time to ensure that they are fully cooked to your liking.

I made this dairy free! I bought vegan tortellini and used a can of full fat coconut milk and forgot the grated cheese! Still soo yummy!
Yes, just don’t add the cream. Or, pull out scoops of soup in bowls for the non dairy people and add cream to the rest of the pot or vise versa!

Spinach is definitely worth a try, but you can always make it without any! If you want the pop of green you could just use some fresh basil as well. Let us know what you think once you make it!
This soup was simple and delicious. I couldn’t get 3 cans of crushed tomatoes in it would over fill the crockpot. All other ingredients worked but I left out the cream. Not to my taste. Will be making this often over the winter.

My wife and I are vegetarians. How would you recommend altering the cooking instructions without the sausage?
You won’t need to change much! If you choose to brown the onions first, then saute them with a little oil and the garlic as directed. If you’re in a pinch you can add them directly to the bottom of the slow cooker, but they won’t have as much flavor as browning them first would. You can substitute the chicken broth with an equal amount of vegetable broth or whatever substitute you prefer.
How much is one serving? Is it one cup full
We don’t have exact measurements for the servings but for the nutrition facts, it will be around 1 1/4 cups per serving.
How can I adjust the timing to cook it on the stove? I’m in college and without a crockpot.

i thought the liquid proportions were all wrong. i only used 1 cup of tomatoes and 4 cups of chicken broth. it also needs more tortellini. i used a 14 oz package and it still wasn’t enough. nice taste to the broth using the lesser proportions

the taste is really good except it is way too salty. 🙁 Huge batch of salty salty soup. Omit the salt people and add to your own bowl if needed.
I’m so sorry it came out too salty for your taste! You can definitely use low-sodium chicken broth and adjust the sodium level from there. The tomatoes you used may also have had added salt. I updated the recipe card so the salt is added to taste.

Hi Katie! The liquid ingredients are as stated in the recipe card at the bottom. You use 3 28 oz cans of crushed tomatoes, or 84 oz total, 6 cups of chicken broth, and 1 cup of heavy cream. The sausage used in the recipe is ground, not in any casing. If you can only find sausage links, remove the casing first and cook in a skillet while breaking up any chunks until browned as stated in step 1 of the recipe. Hi Olivia! The last 20 minutes is just to heat the rest of the ingredients. Either setting should do the trick if the other ingredients are already hot! If you cook it on low and feel it needs more time to heat up, you can definitely add time or turn it to high for those 20 minutes. I hope this helps! Enjoy!
How would you suggest I proceed if I want to make a full batch, eat half and freeze half? Thanks for the awesome recipe- it looks like it will be a hit!
Hi Holly! You can definitely freeze the recipe as is! But for best, freshest tasting results, I would take out the half to freeze before step 5. Then when you go to thaw it, put it in a pot and simmer with the remaining ingredients until everything is heated. Let us know how it turns out!

Would anything change if I used frozen kale instead of fresh?
Hi Laura! You can definitely use frozen kale. I would recommend thawing it and draining any liquid before adding it to the soup and simmering until it’s tender and heated through. Enjoy!
