Snickerdoodle Cookie Dough Bites are the most amazing edible cookie dough you will ever eat! What makes these so special is the secret ingredient…caramel!
If it isn’t obvious by now, I am on a cookie dough kick, last week I shared my Chocolate Chip Cookie Dough Bites. Actually to be honest this isn’t a recent thing, I have been like this since I was a child. But I am finally sharing some of my favorite cookies and their dough featured in bite sized pieces and egg free so you can enjoy them anytime, and well salmonella free.
My son Aiden, loves Snickerdoodle cookies, his favorite cookies are my homemade White Chocolate Caramel Snickerdoodles. Whenever I ask his opinion on what cookie to have for snack or dessert, 90% of the time he replies Snickerdoodles. I agree I love this cinnamon sugar cookie and I especially love them with caramel.
The best part about this recipe is that it takes less than 20 minutes from start to finish. That’s right, whip these babies up and pop them in your mouth.

How do you make Snickerdoodle Cookie Dough Bites?
In a medium-sized bowl, shift together sugar, flour, salt and cinnamon. Beat in butter, vanilla extract, caramel and milk until it starts to come together and is creamy & smooth.
Scoop a heaping tablespoon, I actually use a cookie dough scooper, makes the job easy! Pack in the dough then remove from the scooper or tablespoon and place on prepared pan, you can also roll them into balls which I did for the batch pictured. Place pan in the refrigerator to chill, approximately 10 minutes.
While the dough is chilling, melt chocolate according to package directions. I heat in 30 second intervals, until chocolate is completely melted.
Decorate with the chocolate how you could like, I like to dip the tops in, then sprinkle with mini-colored chocolate chips. The kids like a light drizzle which is easy to do by placing the melted chocolate in a
Ziploc bag with the corner snipped off, topped off with a pinch of cinnamon.
Once the bites are drizzled, covered or dipped in chocolate, finish them off with a dust of cinnamon allow chocolate to harden.
Now they are ready to enjoy!
To store the Snickerdoodle Dough Bites place in an airtight container in the refrigerator for up to 5 days.

Well, I can totally relate to the cookie dough eating…I’ve been doing it since I was a kid too! And no bake snickerdoodle bites with caramel in them sounds like the best thing ever!!! I can’t wait to try these!

I made these, the taste was ok but they were gritty. I beat it for quite a while and they were still gritty. Was I supposed to use confectioners sugar?
