Snickerdoodle Cookie Dough Bites are the most amazing edible cookie dough you will ever eat!
We are fans of edible cookie dough around here, especially the kids! So, it was very fun to come up with these Snickerdoodle Cookie Dough Bites. Soft little bites flavored with cinnamon and a secret ingredient…caramel!
I’ve loved cookie dough since I was a kid and so I love to come up with favorite cookie dough recipes that are edible made without eggs. Of course, Chocolate Chip Cookie Dough Bites are an all-time favorite, but these snickerdoodle cookie dough bites are right up there, too.
My son Aiden loves Snickerdoodle cookies; his favorite cookies are my homemade White Chocolate Caramel Snickerdoodles. Whenever I ask his opinion on what cookie to have for snack or dessert, 90% of the time he replies Snickerdoodles. I agree, I love this cinnamon sugar cookie and I especially love them with caramel.
My daughter loves snickerdoodle cookie dough bites, and whenever she has school friends over, we make a batch because they’re always a hit. So, when I recently revamped the recipe, they were all a little concerned. “Why mess with the recipe? We love it just as it is!” they said.
Well, I wanted to simplify it while maintaining the taste and so when they finally got to try them they were thrilled. In fact, they declared that it was the best recipe I’ve ever made! I wouldn’t go that far, but this edible snickerdoodle dough is delicious and it’s hard to stop with just one bite.
The best part about this recipe is that it takes about 20 minutes from start to finish. That’s right, whip these babies up and pop them in your mouth.
Ingredients
- Flour
- White sugar
- Powdered sugar
- Brown sugar
- Ground cinnamon
- Salt
- Melted butter
- Caramel sauce
- Milk
- Vanilla extract
- White melting chocolate for dipping
How do you make Snickerdoodle Cookie Dough Bites?
Using an electric mixer, whisk together sugars, flour, salt and cinnamon. Beat in melted butter, vanilla extract, caramel and milk until it forms a soft dough and is completely combined.

Scoop a heaping tablespoon, I actually use a cookie dough scooper, makes the job easy!

Pack in the dough then remove from the scooper or tablespoon and place on prepared pan. Place pan in the refrigerator to chill for approximately 10 minutes.

While the dough is chilling, melt chocolate according to package directions.
Decorate with the chocolate how you could like, I like to dip the tops in, then sprinkle with cinnamon.

The kids like only a light drizzle, which is easy to do by placing the melted chocolate in a Ziploc bag with the corner snipped off, topped off with a pinch of cinnamon.

Once the bites are drizzled, covered or dipped in chocolate, finish them off with a dust of cinnamon and allow chocolate to harden.
Store these yummy snickerdoodle dough bites in an airtight container in the refrigerator for up to 5 days.

Ingredients
- 1 1/3 cup flour
- 6 tablespoons white sugar
- 1/4 cup powdered sugar
- 6 tablespoons brown sugar
- 1 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup butter melted
- 2 tablespoons caramel sauce
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup white melting chocolate for dipping
Instructions

Well, I can totally relate to the cookie dough eating…I’ve been doing it since I was a kid too! And no bake snickerdoodle bites with caramel in them sounds like the best thing ever!!! I can’t wait to try these!

I made these, the taste was ok but they were gritty. I beat it for quite a while and they were still gritty. Was I supposed to use confectioners sugar?
