As I mentioned previously, my family is quite smitten with our air fryer. We’ve tried a wide variety of things, including vegetables (like carrots), and even 6 months after our air fryer purchase, it is still being used daily.
My daughter Jordan loves popcorn shrimp, and the rest of the kids, anytime we are out to eat, love to order coconut shrimp, especially my youngest, Cannon. My husband is a huge seafood fan, along with all 5 of our kids. I love the taste, but I hate the smell. So any recipe that I can make and it doesn’t stink up the house for days, I am game.
Adding fish to our diet or meatless meals has been on my hubby’s to-do list for the last few years. More vitamins and greens, he says. The struggle is finding those recipes we all love, that don’t require the grill during the winter months, vegetables my kids will eat, or seafood recipes that don’t stink up the house for days.

We have started to zero in on some of our favorite recipes, ones we all enjoy. And let me tell you this recipe for Air Fryer Coconut Shrimp, will become a new addition to our menu rotation and we can serve it with a green salad to make it a well-rounded meal. In fact, having it for lunch, like we did today put to shame the infamous restaurant appetizer and I was happy because it was healthier.

Not only are we focusing on adding things to our diet, but I also tend to make more meatless meals in the spring as the weather warms up and we go for more salads and put fish to the grill.
Easy Coconut Shrimp in the Air Fryer
Making coconut shrimp in the air fryer is incredibly delicious. The best part is that there is no waiting for the oil to preheat, and no grease splatter, overall, the air fryer makes it so easy, and the clean-up is simple.
The shrimp are lightly tossed in seasoned flour, with salt, garlic, paprika, and pepper. Another bonus of using the air fryer is getting the same crunchy texture without any oil.

Ingredients
I love to use small shrimp, but you could use large shrimp as well; you will just get fewer shrimp to share.
- flour
- salt & pepper
- paprika
- garlic powder
- Panko bread crumbs
- shredded sweetened coconut
- 2 large eggs
- 1lb shrimp, peeled and deveined
I have two suggestions if you need an easy sauce to make with the shrimp. The first would be picking up a bottle of Sweet Chili Sauce. Or make my homemade Honey Sriracha Sauce.
Easy dip recipe for coconut shrimp
Simple easy recipe, just combined 1 tablespoon of sriracha, 2 tablespoons of honey, 2 generous tablespoons of sweet chili sauce, and 1/2 cup mayo + add a pinch of salt. Mix well in a small bowl and top with some freshly chopped cilantro.
How to Cook Shrimp in the Air Fryer
Always consult your air fryer’s guide for cooking tips. Every model is a little different, but this is how I do it, and it works perfectly every time:
- Set the temperature to 400 degrees on the air fryer.
- In a shallow bowl, season the flour. In a separate bowl, combine bread crumbs and sweetened shredded coconut.
- Place eggs in a third bowl and whisk together. TIP – For a touch of sweetest, add 1/4 teaspoon of coconut extract.
- Working a few at a time, about a handful, lightly toss the shrimp in the seasoned flour, then into the whisked eggs, and lastly, the coconut mixture.
- Place shrimp in a single layer in the air fryer basket. Bake shrimp for 10 to 12 minutes, until they are golden and cooked through. Work in batches as necessary, depending on the size of your air fryer.
- Remove from the air fryer and serve shrimp with dipping sauce if you desire.
