Crispy and perfectly sweet, this recipe for Air Fryer Coconut Shrimp is restaurant-worthy but better because it’s made at home.

Pair it with honey-sriracha sauce to add layers of flavor. This recipe is not only incredibly delicious, but it’s also healthier than the original fried version.

As mentioned, my family is quite smitten with our air fryer. We’ve tried a wide variety of things, including vegetables (like carrots), and even six months after our purchase, it is still being used daily.

My daughter Jordan loves popcorn shrimp, and the rest of the kids love to order coconut shrimp anytime we are out to eat, especially my youngest, Cannon.

We have started to zero in on some of our favorite recipes, ones we all enjoy. And let me tell you, this recipe for Air-Fried Coconut Shrimp will become a new addition to our menu rotation. We can serve it with a green salad to make it a well-rounded meal.

Easy Coconut Shrimp in the Air Fryer

Making coconut shrimp in the air fryer is incredibly delicious. The best part is that there is no waiting for the oil to preheat and no grease splatter. Overall, the air fryer makes it easy, and the clean-up is simple.

The shrimp are lightly tossed in seasoned flour, with salt, garlic, paprika, and pepper. Another bonus of using the air fryer is getting the same crunchy texture without oil.

  • This is a simple recipe. Combine one tablespoon of sriracha, two tablespoons of honey, two generous tablespoons of sweet chili sauce, and half a cup of mayo, plus a pinch of salt. Mix well in a small bowl and top with some freshly chopped cilantro.

How to Cook Shrimp in the Air Fryer

Always consult your air fryer’s guide for cooking tips. Every model is a little different, but this is how I do it, and it works perfectly every time:

  • Set the temperature to 400 degrees on the air fryer.
  • In a shallow bowl, season the flour. In a separate bowl, combine bread crumbs and sweetened shredded coconut.
  • Place eggs in a third bowl and whisk together. TIP – Add 1/4 teaspoon of coconut extract for a touch of sweetness.
  • Working a few at a time, about a handful, lightly toss the shrimp into the seasoned flour, the whisked eggs, and the coconut mixture.
  • Place shrimp in a single layer in the air fryer basket. Bake for 10 to 12 minutes until golden and cooked through. Depending on the size of your air fryer, work in batches as necessary.
  • Remove from the air fryer and serve shrimp with dipping sauce.
