Egg White Casserole is loaded with layers of flavor. Made with bacon, spinach, egg whites, & smoked Gouda, this breakfast dish is incredibly delicious.
If you’re looking for an easy breakfast recipe that’s perfect for a weekend brunch, try making this Egg White Breakfast Casserole! Everyone will love it.

I’m sure you’re familiar with the classic breakfast casserole I grew up eating. It has bread, cheddar cheese, sausage, eggs, milk, and lots of cheese. My mom always made it for special occasions like Christmas morning, showers, Easter, or when we had company in town. It’s one of my favorites.
This is a twist on that casserole. Fully loaded, but swapping out the cheddar cheese for gouda, sausage for bacon, and of course, egg whites (my preference).

Although I still prepare this dish mostly for sentimental reasons, I have made some modifications to suit my evolving taste. I have reduced the amount of cheese since I don’t enjoy it as much as before.
Nevertheless, cheese remains a key ingredient in the dish. Instead of the regular cheese, I use a more refined type like Gouda, which has a smoky taste that adds an extra layer of flavor to this beloved breakfast dish.

I enjoy adding vegetables to my cooking, but my kids don’t share the same sentiment. To balance their distaste, I add some bacon which neutralizes their negative reaction and it worked!
The casserole turned out to be a success and even my husband enjoyed it, so it was an added bonus. This recipe was a double win for me!

This looks like it might actually be better than the sausage, tons of cheese, eggs mess. Love the addition of spinach, that always makes me feel better about my bacon consumption.
Me too. xo San
Next time I’ll add more gouda, it was a little bland. I would add some green onions &/or shallots, peppers & mushrooms as well to season it up a bit more. Otherwise, very tasty!!!
This looks delicious! I love all the ingredients used… 🙂
Made this today and it was delicious!
Can it be made with egg yolks? How would you adjust the recipe to include the yolks?
I found an answer to my question. One egg = 2 egg whites.
