This Simple Egg White Breakfast Casserole has many layers of flavor with just a few ingredients, including bacon, spinach, egg whites, & smoked Gouda.
I grew up eating this amazing breakfast casserole, I am sure you know that one that I am talking about. It has bread, cheddar cheese, sausage, more cheddar cheese, eggs, more cheese, and milk, then a little more cheese. I love it. My mom always made it for special occasions like Christmas morning, showers, Easter or if company was in town.
While I still will make this and really only do for nostalgic reasons, I have changed it up a bit because my taste has evolved and I don’t like as much cheese. While cheese is still a star in the dish, I like to use a more “sophisticated” cheese, like Gouda for its smokiness, adding another layer flavor to this breakfast favorite.
Adding in some veggies is a perk for me, a downer for the kids. So I add in some bacon to counteract their “eww” reaction. And it worked, this casserole was a hit with my husband too! So a double win for this recipe.

How do you make Simple Egg White Breakfast Casserole?

Preheat oven to 350 degrees.

Prepare 1-quart baking dish by spraying non-stick cooking spray on the sides and bottom of the pan; set aside.

In a medium mixing bowl, whisk egg whites, milk, cheese, bacon, and spinach and season with salt and pepper. Whisk until well combined, add in bread and stir until all the bread is wet.

Pour into prepared pan. Bake at 350 degrees for 45 minutes. Remove from oven and let cool for a couple of minutes, then serve. Enjoy!

- 1 cup smoked Gouda cheese shredded, you may use another white cheese if desired

Kids review: Well the key word here in this recipe, if it didn’t have it my kids wouldn’t have even tried it. But bacon makes everything better…right?!
This looks like it might actually be better than the sausage, tons of cheese, eggs mess. Love the addition of spinach, that always makes me feel better about my bacon consumption.

Next time I’ll add more gouda, it was a little bland. I would add some green onions &/or shallots, peppers & mushrooms as well to season it up a bit more. Otherwise, very tasty!!!
