I’m sure you’re familiar with the classic breakfast casserole I grew up eating. It has bread, cheddar cheese, sausage, eggs, milk, and lots of cheese. My mom always made it for special occasions like Christmas morning, showers, Easter, or when we had company in town. It’s one of my favorites.

This is a twist on that casserole. It’s fully loaded, but I swapped out the cheddar cheese for gouda, sausage for bacon, and egg whites (my preference).

Although I still prepare this dish mainly for sentimental reasons, I have made some modifications to suit my evolving taste. I have reduced the amount of cheese since I don’t enjoy it as much as before.

Nevertheless, cheese remains a key ingredient in the dish. Instead of the regular cheese, I use a more refined type like Gouda, which has a smoky taste that adds an extra layer of flavor to this beloved breakfast dish.

The casserole was a success; even my husband enjoyed it, so it was a bonus. This recipe was a double win for me!

ingredients

  • Egg whites whisked
  • French bread cubed
  • Milk
  • Gouda cheese, shredded; you may use another white cheese if desired
  • Bacon, cooked and chopped
  • Fresh spinach chopped
  • Salt & pepper, to taste

How to make egg white casserole

Preheat oven to 350 degrees.

Prepare 1-quart baking dish by spraying non-stick cooking spray on the sides and bottom of the pan; set aside.

Whisk egg whites, milk, cheese, bacon, and spinach in a medium mixing bowl and season with salt and pepper. Whisk until well combined, add the bread, and stir until all the bread is wet.

Pour into prepared pan.

Bake at 350 degrees for 45 minutes. Remove from oven and let cool for a couple of minutes, then serve. Enjoy!

  1. Next time I’ll add more gouda, it was a little bland. I would add some green onions &/or shallots, peppers & mushrooms as well to season it up a bit more. Otherwise, very tasty!!!
