Broccoli Salad

Servings: 10 1 cup servings

This Broccoli Salad is one of my favorites! This simple recipe is made with bacon, cranberries, cheddar cheese, and a homemade dressing.

Ingredients
 

  • 8 slices bacon
  • 1 1/2 cups sharp cheddar cheese
  • 1/2 cup diced red onion
  • 7 cups fresh broccoli
  • 1 cup non-fat plain Greek yogurt
  • 1/4 cup red wine vinegar
  • 1/8 cup sugar
  • 2 teaspoons ground pepper
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/2 cup dried cranberries

Instructions
 

  • Place your bacon in a large skillet over medium-high heat. Cook it for 8 to 10 minutes until golden brown, then transfer it onto absorbent paper towels. Give the strips some time to cool before you crumble them.
  • Combined crumbled bacon, broccoli, cheese, onion, and dried cranberries into a large mixing bowl.
  • In a small mixing bowl, whisk together the Greek yogurt, red wine vinegar, sugar, pepper, salt, and, lemon juice; pour over the salad and toss to combine. Cover and refrigerate until ready to serve.
