Broccoli Salad
Ingredients
- 8 slices bacon
- 1 1/2 cups sharp cheddar cheese
- 1/2 cup diced red onion
- 7 cups fresh broccoli
- 1 cup non-fat plain Greek yogurt
- 1/4 cup red wine vinegar
- 1/8 cup sugar
- 2 teaspoons ground pepper
- 1 teaspoon salt
- 1 teaspoon lemon juice
- 1/2 cup dried cranberries
Instructions
- Place your bacon in a large skillet over medium-high heat. Cook it for 8 to 10 minutes until golden brown, then transfer it onto absorbent paper towels. Give the strips some time to cool before you crumble them.
- Combined crumbled bacon, broccoli, cheese, onion, and dried cranberries into a large mixing bowl.
- In a small mixing bowl, whisk together the Greek yogurt, red wine vinegar, sugar, pepper, salt, and, lemon juice; pour over the salad and toss to combine. Cover and refrigerate until ready to serve.
