Brookies Cookies combine two of my favorite things – homemade chocolate brownies and chocolate chip cookies! Maybe you’ve seen brookies bars? Well, I turned the dessert bar into an incredible cookie recipe your whole family will love.

Combine a fudgy brownie with a soft and chewy chocolate chip cookie, and you get brookies cookies! This is is such a fun recipe, and who’s ever going to say no to two desserts combined? No one at my house, I can assure you of that!

I’m not sure where this idea originated, but whoever thought to combine these two treats is a genius! These brownie cookies are right up there with my Rolo stuffed peanut butter cookies and Mississippi mud cookies in the decadence department. I love a great dessert mash-up and brookies cookies are a must-try.

Sometimes I make a batch for just our family, but I love to give them out as gifts, too. A plate of these brookies is a great way to brighten someone’s day.

Recipe Notes

Don’t be scared off by the long ingredient list – most ingredients are used in the chocolate chip cookie dough and brownie batter.

If you can make brownies and cookies, you can make this recipe! It’s entirely from scratch, and the final result is cookie perfection.

This brookies recipe is tried and true – I’ve tested it many times to get the right texture. The rich and fudgy brownie part combines perfectly with the soft, chewy chocolate chip cookie. You are going to love them!

Ingredients

Brownie Dough

  • Melted butter
  • White sugar
  • Unsweetened cocoa powder
  • Large eggs
  • Vanilla extract
  • All-purpose flour
  • Salt

Chocolate Chip Cookie Dough

  • Softened butter
  • Brown sugar packed
  • White sugar
  • Large egg
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Chocolate chips

Note: For the chips, you can use your favorite! Semisweet chocolate chips, milk chocolate chips, or dark chocolate chips work well.

Bake the cookies: Place the sheet pan in the oven and bake for 10 minutes or until the cookie edges are set and light golden brown. Remove the pans from the oven and cool the cookies on the pan for five minutes. Transfer the cookies to a cooling rack to cool completely.

Storage Tips

Once the cookies are cooled, store them in an airtight container at room temperature. They will keep for two to three days.

Or, place them in a freezer-bag or container and freeze them for up to a month.

Ingredients
 

Brownie Dough

  • 1/2 cup butter
  • 3/4 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

Chocolate Chip Cookie Dough

  • 1/2 cup butter
  • 1/2 cup brown sugar packed
  • 1/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350°F and line cookie sheets with parchment paper.
  • Make brownie dough: In a large bowl, whisk together melted butter, sugar, and cocoa powder. Add eggs and vanilla and whisk until shiny. Add flour and salt and stir until just combined. Set in fridge to chill while making the chocolate chip cookie dough.
  • Make chocolate chip cookie dough: In another large bowl with an electric mixer, beat together butter and both sugars until fluffy. Add egg and vanilla and beat until combined. Add flour, baking soda, and salt and stir until just combined. Fold in chocolate chips.
  • Using a cookie scoop, fill halfway with brownie dough and then fill the other half with chocolate chip cookie dough. Press/roll together and set on the baking sheet. Repeat with both doughs.
  • Bake 12 per sheet for 10 minutes or until the edges are set and a light golden brown. Remove from oven and cool on sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
