Why choose when you can have brownies and cookies in one delicious treat? These Brookies Cookies will satisfy both cravings at the same time!
Brookies Cookies combine two of my favorite things – homemade chocolate brownies and chocolate chip cookies! Maybe you’ve seen brookies bars? Well, I took the dessert bar and turned it into a decadent cookie recipe your whole family is going to love.

Take a fudgy brownie and combine it with a soft and chewy chocolate chip cookie and you get brookies cookies! This such a fun recipe and who’s ever going to say no to two desserts combined into one? No one at my house, I can assure you of that!
I’m not sure where this idea originated, but whoever thought to combine these two treats is a genius! These brownie cookies are right up there with my Rolo stuffed peanut butter cookies and Mississippi mud cookies in the decadence department. I love a great dessert mash-up and brookies cookies are a must-try.
Sometimes I make a batch for just our family, but I love to give them out as gifts, too. A plate of these brookies is a great way to brighten someone’s day.

Recipe Notes
Don’t be scared off by the long ingredient list – most of the ingredients are used in both the chocolate chip cookie dough and brownie batter.
If you can make brownies and cookies, you can make this recipe! It’s completely from scratch and the final result is cookie perfection.
I love, love, love the two-toned look of the baked cookies. They’re a stunner and will grab everyone’s attention!
This brookies recipe is tried and true – I’ve tested it so many times to get just the right texture. The rich and fudgy brownie part combines perfectly with the soft and chewy chocolate chip cookie part. You are going to love them!

Ingredients
Brownie Dough
- Melted butter
- White sugar
- Unsweetened cocoa powder
- Large eggs
- Vanilla extract
- All-purpose flour
- Salt
Chocolate Chip Cookie Dough
- Softened butter
- Brown sugar packed
- White sugar
- Large egg
- Vanilla extract
- All-purpose flour
- Baking soda
- Salt
- Chocolate chips
Note: For the chips, you can use your favorite! Semisweet chocolate chips, milk chocolate chips, or dark chocolate chips work well.

Instructions
Preheat the oven to 350°F and line cookie sheets with parchment paper.
Make brownie batter: In a large bowl, whisk the melted butter, sugar, and cocoa powder. Add the eggs and vanilla and whisk until the mixture is shiny. Add the flour, salt and stir until just combined. Chill the batter while you make the cookie dough.
Make chocolate chip cookie dough: In another large bowl with an electric hand mixer or in a stand mixer, beat the softened butter and both kinds of sugars until the mixture is fluffy. Add the egg and vanilla and beat until combined. Add the flour, baking soda, and salt and stir until just combined. Fold in the chocolate chips.
Form the cookie dough balls: Use a cookie scoop and fill it halfway with the chilled brownie batter. Top the batter with the cookie dough so the scoop is filled. Smooth the ball into a ball and lightly press it. Place it on the prepared baking sheet and repeat with the rest of the dough.

Bake the cookies: Place the sheet pan in the oven and bake for 10 minutes or until the cookie edges are set and light golden brown. Remove the pans from the oven and cool the cookies on the pan for five minutes. Transfer the cookies to a cooling rack to cool completely.

Storage Tips
Once the cookies are cooled, store them in an airtight container at room temperature. They will keep for two to three days.
Or, place them in a freezer-bag or container and freeze them for up to a month.

You will love pulling a fresh-baked batch of brookies cookies out of the oven! You know I don’t have a favorite cookie recipe – I love them all! – but these chocolate brownie cookie bites are definitely hard to resist.
Treat yourself soon, friends. I know you’re going to love them. Enjoy! XOXO San
