My husband is obsessed, and I don’t say that lightly, with my Amazing Soft Sugar Cookies. In fact, I think that if I had not ever made that recipe we would have gone broke or had to have purchased the local cookie store that sells these “famous” sugar cookies. He loves them that much, they’re pretty much his weakness. And I know that still to this day, even though he says that mine are better, he still visits the said cookie store when I send him shopping. Conveniently it is located by the local grocery we shop at.

While preparing my list of what I was going to make our family and friends this year, you know THE dessert plate. I knew that I wanted to add my sugar cookies. But I was a bit hesitant because of the frosting, it would stick the wrapping and then the packaging wouldn’t look as cute. That is when I thought of putting the frosting inside the cookies. Great idea, except for the fact that it is one HUGE cookie. So I made them mini. I love mini anything, bite-sized is best. One and done. Right?!

Well, these cookies are more like 3 bites if you are like me, or 1 ½ if you are like my husband, he practically inhales it. They are so cute and festive, and so much easier to decorate. These Mini Sugar Cookie Sandwiches will not just be appearing on this year’s dessert plate, but they will be made all year long.

How do you make Mini Sugar Cookie Sandwiches?

Cookies
Preheat oven to 350 degrees F (180 degrees C). Lightly grease 2 cookie sheets.

Cream together sugar and butter. Beat in egg yolks and almond or vanilla extract.

Add flour, baking soda, and cream of tartar and mix.

(Note: dough will be firm, not like your normal cookie dough. Don’t worry it is supposed to be this way.)

Form dough into walnut size balls (about a tablespoon), break cookie dough ball in half, re-roll and place 2 inches apart on cookie sheet. Don’t flatten. Bake 10 minutes, until tops are cracked and just turning color. Let cool on tray before frosting.

Buttercream
In a large bowl, cream together the confectioners’ sugar and butter until smooth. Gradually mix in the milk and almond or vanilla with an electric mixer until smooth and stiff, about 5 minutes.

Color with food coloring if desired. This makes 3 cups, which may be more than you need to frost the cookies.

Frost bottom side of one sugar cookie, then place one more cookie on top of buttercream. Roll in sprinkles if desired

Serve, devour, and enjoy!

Sugar Cookies

  • 1 1/4 cups white sugar
  • 1 cup butter
  • 3 egg yolks
  • 1 teaspoon almond extract secret ingredient!
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar

  • 5 tablespoons milk
  • 1 teaspoons almond extract secret ingredient!
