Slow Cooker Chicken Chili Dip is the perfect dip to serve to a crowd or to devour with a few friends on game day. Full of flavor and easy to throw together, this is a party must-have.

Now that summer is in full swing, and we are in the heat {literally} of BBQs, parties, and poolside get-togethers, it has me already thinking about fall and all of our fun football parties.
I do love football, but not just because I enjoy the game as much as I do the food and watching my family {who are competitive} cheer on their favorite team – the Broncos, of course.

My mom’s queso dip is one of my kid’s favorite game-time treats and my kids request it every single week during football season.
While I like it as well, I love to switch things up so I decided to combine two of my favorites my mom’s queso & my White Chicken Chili to make this delicious Slow Cooker Chicken Chili Dip.

Chicken, beans, cheese, and chili seasonings, it’s the perfect dish to pull up to a bag of chips, smoother over a burrito with it, or even just even eat with a spoon, which is precisely what my son Cannon does.
Now I have seen this done with beef instead of chicken, and while that is delicious, I naturally lean towards chicken rather than beef.

Slow Cooker Chicken Chili Dip
Ingredients
- 1 can dark red kidney beans drained and rinsed
- 1 can black beans drained and rinsed
- 1/2 large white onion diced
- 10 ounce bag frozen corn
- 1 – 4 ounce can chopped green chiles
- 2 – 10 ounce cans diced fire roasted tomatoes
- 1 – 8 ounce can tomato sauce
- 1 tablespoon taco seasoning
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 3 raw chicken breast cut into cubes
- 16 ounces Velveeta cut into cubes
- 1 cup milk
Instructions
- Set slow cooker on high heat and add tomatoes and tomato sauce. Top with black beans, kidney beans, green chiles and corn.
- Next, add in all of the seasonings: cumin, chili powder and taco seasoning. Stir everything in the slow cooker until combined.
- Add chicken (do not mix in), Velveeta and then the milk. Place the lid on the slow cooker and cook on high 3-4 hours.
- Add chicken breast directly on top of the tomato mixture.
- Add Velveeta cubes on top of the chicken.
- Remove lid and stir to combine.
- Keep slow cooker on warm and serve.
- Great as a dip with taco chips, tortillas, crackers or even make as a topping to a burrito or taco salad.
I’m going to add this to my Taco Tuesday lineup for sure! I can just let it cook all day while I do my thing ,and then add it at the end.
