Ingredients

Just 3-simple ingredients are all it takes to recreate this nostalgic candy store favorite right in your kitchen. Here’s everything you need to whip up this sweet treat:

  • Roasted and salted Spanish peanuts – you could also use regular roasted and salted peanuts; I prefer Spanish peanuts.
  • White chocolate chips and semi-sweet chocolate chips
  • Shortening
  • Fine or coarse sea salt, optional
  • Holiday sprinkles or coarse sea salt, optional as a topper

Recipe Tips

  • I used roasted, salted peanuts for these candies, but feel free to go with unsalted if you want more control over the saltiness.
  • To keep them fresh, store in an airtight container in the fridge for up to a month. You can also freeze them in airtight, freezer-safe containers for up to 3 months.
  • I used white chocolate chips for this recipe, but feel free to use whatever you like—semi-sweet, dark, white, or just milk chocolate chips. You can even go with Baker’s chocolate bars if you want, just make sure to break them into bite-sized pieces before melting.

Recipe Variations

You can swap in any roasted nuts you like—cashews, almonds, pecans, or a mix of whatever you have. Feel free to get creative with different types of chocolate or extra ingredients to match your tastes. We also love trying these clusters with chocolate for a more decadent vibe or white chocolate if you’re in the mood for something sweeter.

White chocolate peanut clusters are easy to make with just a few ingredients. Simple, sweet, and crunchy treat, perfect for any occasion.

Ingredients
 

  • 4 cups roasted and salted peanuts
  • 24 ounces white chocolate chips
  • 2 tablespoons shortening
  • 1/4 teaspoon sea salt optional
  • holiday sprinkles or coarse sea salt

Instructions
 

  • Prepare a large baking sheet by lining it with parchment paper.
  • Add a few inches of water to the pot, ensuring it doesn't touch the bottom of the bowl.
  • Heat the water over medium heat. Once it starts boiling, pop your bowl with chocolate and shortening on top.
  • Melt the white chocolate and shortening by stirring continuously until it's smooth. Once the chocolate has melted, take the bowl off the heat.
  • Fold the roasted peanuts into the melted chocolate, making sure they're fully coated. Mix it up!
  • Just drop a spoonful of the mixture onto the lined sheet. You can also use a large cookie dough scooper, my favorite method and less messy.
  • Top with holiday sprinklers or coarse sea salt if you wish.
  • Let the Chocolate Covered Peanuts sit at room temperature until they're set. If you're in a hurry, pop them in the fridge for 20-25 minutes. Keep the chocolate peanut clusters in an airtight container in the fridge and they'll stay good for up to 1 month.
