How to make peanut butter Bark Toffee
Preheat the oven to 425° F and line an 11×16″ sheet pan with aluminum foil. Coat it with cooking spray and then arrange the soda crackers salt-side in a single layer on the pan.
Add butter and brown sugar in a medium saucepan, and stir over medium heat. Let it boil and simmer until it turns a caramel color.

This only takes a few minutes. Immediately remove from the heat and slowly pour the caramel over the crackers. Make sure to coat the crackers evenly.

Place the pan in the oven and bake for 4-5 minutes, until the caramel bubbles. This happens quickly, so keep an eye on it!

While cooking, add chocolate chips and peanut butter to a microwave-safe bowl and heat for 1 minute. Stir and heat again for 1 minute until the mixture is melted and smooth.
Immediately pour the chocolate/peanut butter mixture slowly and evenly over the caramel saltines.

Carefully spread over the caramel without moving it around too much.

Transfer the pan to the freezer for 20 minutes or until the chocolate and caramel are set and firm.

Break or cut the peanut butter toffee bark into pieces as desired.
Store in an airtight container. We prefer to store them in the fridge, but they will be fine at room temperature.

This toffee bark makes the best gifts if you can bear to part with it! The kids and I package it in Christmas bags and deliver some to the neighbors every year, and it’s always a hit!
As long as it’s stored in an airtight container, it will keep well for up to a week or so!

- 40-50 saltine crackers (square soda crackers)
- 1 cup butter
- 1 cup light brown sugar
- 2 cups semisweet chocolate chips
- 1 1/3 cups creamy peanut butter
Instructions
