This Easy Beef Queso is a simple yet insanely delicious recipe. The best part is it can be ready in just under 20 minutes.

Nachos are never a thing anyone turns down on game day. Really having queso, chips, soda, and maybe a few crackers and some M&Ms makes every game day a win, whether your team takes the victory or not.

Today I am sharing this delicious Easy Beef Queso recipe along with my thoughts on the ease of picking up all of your family game day essentials.

Growing up, football season was big in my home. My parents had their friends over and always made a delicious spread. I have fond memories of my mom’s queso, Shelia’s Chocolate Peanut Butter Bars, and Jean always bringing something new and tasty. Connie, my mom’s friend, was known for her no-bake cookies, and I always hoped she would bring them; it always made my day. More often than not, she did.

I want to create these same memories for my kids, starting with great food and people.

Of course, since my mom’s queso recipe was my favorite, I wanted to share it with you. Easy and simple, this is the perfect dip for chips, crackers, and taquitos, and honestly, you could eat it with a spoon.

What ingredients do you need to make queso?

  • Ground Beef
  • Taco Seasoning
  • Velvetta Cheese
  • Cheddar Cheese
  • Canned Diced Tomatoes with Green Chiles
  • Milk
  • Optional Toppings for garnish
  • Dippers: chips, crackers, pretzels or taquitos

How To Make Beef Queso

In a large skillet over medium-high heat, cook ground beef until no longer pink and season with taco seasoning. 

Drain the juice from the can of tomatoes.

Add diced tomatoes, Velveeta, and cheddar cheese and stir until cheese melts. Pour in milk and stir until all cheese has melted.

Garnish with additional toppings if desired.

  • 8 ounces Velveeta cheese
  • 2 cups grated cheddar cheese
  • 10 ounces diced tomatoes with green chiles canned, juices drained
  • 1/2 cup milk

Instructions
 

  • In a large skillet over medium-high heat, cook ground beef until no longer pink and season with taco seasoning.ย

        Do you drain the tomatoes?

          1. In the recipe it says to drain themโ€”but here in comments you say you prefer not drained? Iโ€™m just confused which to do now!

          2. I would drain them; follow the recipe, then you can try not draining them as well. Either way is delicious. But for the first time making it, drain them.

    1. Hi Anna! We haven’t tested this recipe in the crockpot, therefore I can’t be sure it would work. You could try cooking the ground beef as stated, then adding with the other ingredients in the crockpot until melted and stir.

      1. Do you drain the beef after cooking? I know many recipes call for butter so Iโ€™m thinking you leave the fat in but not sure thanks

    1. Yes, it would, maybe start on low or high to get it melted and then of from there, once it all melts turn to warm, just make sure to cook the meat beforehand. ๐Ÿ™‚

    Excellent! My husband likes to add ground beef and sausage to it so it’s super chunky. This is a great recipe and it even reheats well.

    1. I don’t, but I would also say that it depends on what type of hamburger you use. I use lean meat, so I don’t need to. If I were to use an 80/20 hamburger, then yes. Hope this helps!

  11. Hi! I followed directions to a T, so not sure what I did wrong, but my dip was really soupy. I added 8 additional ounces of velveeta and that helped a little bit. That flavor is okay, but itโ€™s definitely not a thick dip.

    1. Oh that is too bad; what kind of canned tomatoes did you use? I typically will drain the tomatoes depending on the brand because that will make it too runny, next time just reduce the amount of milk or drain the tomatoes.
