My son, Aiden turned 12, errr I mean, 14 yesterday. I don’t deal well with people getting older. It’s all very bittersweet. So far as a mom, I have enjoyed every single stage with Aiden. He was just a doll as a baby and really easy going. He rarely cried. He slept through the night. Ate like a champ and smiled all the time. And all of that hasn’t really changed much.  H

e literally still smiles all the time, even with his eyes – it’s one of his best features. Last night after we ate his birthday cake, this Fudge Brownie No-Bake Raspberry Cheesecake we all went around the table and said 1 thing that we loved about Aiden. When it got to our daughter, Jersey (8-years) she said, “you’re always smiling”. {I may have cried.}

Aiden is one of kind. He is the kid that on his birthday he writes his dad and I a thank you note. This year, he wrote me two poems. I will admit I cried when he read them to me and he smiled.

For example,
Emacity means to enjoy purchasing things.

This is the boy that will come home, snuggle with his dad, listen to Science Lab podcasts in bed until he can barely keep his eyes open and talk, talk and talk {especially when he is slowly unloading the dishwasher}. He will comfort when someone is hurt, talk to those that are lonely and care for all in need. He has a heart of gold. He loves the mountains, we call him the mountain goat – because he loves to hike {granted at his own pace}, he loves to hunt and fish with his Papa Gillan, go out to eat but most of all this kid LOVES science. He thinks science, breathes science and is already planning his college career. I am lucky. Happy Birthday my sweet boy – I love you and so proud to be your mama. XOXO Mom

Fudge Brownie No-Bake Raspberry Cheesecake

Fudge Brownie No-Bake Raspberry Cheesecake - the best ever hot fudge sauce drizzled over a fresh raspberry no-bake cheesecake all on top of a fudgy delicious brownie. This is the dessert you have been craving.

Ingredients
 

  • 1 boxed brownie mix prepared as directed on the box
  • NOTE To make this a true no-bake recipe buy a premade brownies from your local bakery or grocery store and cut to fit pan used in the directions below.

No Bake Cheesecake

  • 12 ounces cream cheese softened
  • 1/2 cup sugar
  • 1/4 cup 1/2 stick butter, softened
  • 2 cups frozen non-dairy whipped topping thawed
  • 12 ounces raspberries divided

Best Ever Hot Fudge Sauce

  • ½ cup brown sugar
  • ¼ cup cocoa powder
  • ¼ cup butter
  • ¼ cup milk
  • 2 teaspoons vanilla

Homemade Whipped Cream

  • 1 cup heaving whipping cream
  • 3 tablespoons white granulated sugar

Instructions
 

  • Prepare brownies in a 8-inch springform pan, otherwise known as a cheesecake pan by spraying with cooking oil. Make brownies according to package directions. Remove brownies from oven and completely cool.
  • Once brownies are completely cool make the no-bake cheesecake.
  • Beat together cream cheese, sugar and butter in large bowl on medium speed until smooth and creamy. I used my KitchenAid mixer for this. Fold in whipped topping until combined and completely smooth.
  • Fold in 9 ounces of raspberries, approximately 1 1/2 packages. You can use less if you like, save the reserved raspberries as a topping. Spread on top of cooled brownies. Place in the refrigerator until firm, 1-2 hours.
  • Prepare Best Ever Hot Fudge Sauce, directions here.
  • Allow hot fudge sauce to cool a bit to room temp so that it doesn't melt the cheesecake.
  • Make homemade whipped topping if desired. Beat with an electric mixer the heavy whipping cream and sugar in a medium bowl until it makes stiff peaks - stir once or twice, set aside. If not using immediately I store in a Ziplock bag in the refrigerator.
  • Slice the cheesecake into 12-16 pieces. Drizzle each slice with hot fudge sauce, a dollop of whipped cream and top with a raspberry. Mini chocolate chips are a fun garnish if so desired.
  • Serve, enjoy and devour.

  2. What a lovely post. This actually made me teary eyed. My boy turns 13 this Saturday. These kids need to slow down on the growing. LOL! This post didn’t just make me teary eyed though. It also made me want cake. THIS cake to be exact. Oh my, just look at all that beautiful sin. LOL I have got to make this!
