Mango Pasta Salad is a sweet and mildly spicy pasta salad made with fresh mangoes, peppers, and sausage, and drizzled with a citrus vinaigrette.

Summer is a particular time for me. No, not because my husband gets the summers off and screws up any ounce of an organization that existed during the school year. Not due to my attempts to get tanner (a.k.a. slightly less white) by frequently “forgetting” to put on sunscreen.

It’s because I get time to plan and follow through with get-togethers of all kinds. Whether with friends, family, or new neighbors, summer provides the perfect opportunity to recharge and reconnect with people.

This last week, it was a chance to catch up with my sisters. We met for lunch, chatting, laughing, and storytelling for two hours. I wanted to try something new, and I know my sister Nicole loves pasta salads. I decided to pair the rich sweetness of fresh mango with the mild heat of Aidells® mango jalapeno chicken sausage and create this new Mango Jalapeno Pasta Salad.

With fresh peppers and mangos, Aidells® Mango Jalapeno Sausage, Monterrey Jack, and a light, fresh citrus dressing, this pasta was a hit. Cumin and Cilantro blend with the olive oil and citrus to create a dressing without the heaviness of a more traditional pasta salad. It was perfect for a quick, light lunch, but could easily be served as a side dish for a festive BBQ or main dish for a family dinner.

My sisters and I eventually finished it and the stories, and like always, there had to be a sweet ending. For me it was a red velvet cupcake, for my sisters it was The Wine Group’s Cupcake® Red Velvet Wine.

How do you make Mango Pasta Salad?

Dressing

Add all of the ingredients to a blender and puree until well combined and smooth. Pour into a mason jar and set in the refrigerator until ready serve.

Pasta Salad

Cook pasta according to package directions. Drain and rinse noodles with cold water and set aside.

Cook sausages according to package directions. Sliced and quarter the sausages, allow them to completely cool.

While cooling, dice mango and peppers. Mince jalapeno pepper.

In a large bowl combine all the ingredients, add dressing and toss to combine. Serve immediately or cover and place in the fridge until ready to serve.

Ingredients
 

Dressing

  • 1 large ripe mango peeled, pitted, and roughly chopped
  • ¼ cup fresh lime juice
  • ¼ cup fresh orange juice
  • 2 tablespoons honey
  • ¾ teaspoon cumin
  • ¾ teaspoon granulated garlic
  • 1 teaspoon salt
  • cup extra virgin olive oil
  • 2-3 tablespoons finely chopped cilantro
  • ¼ teaspoon freshly ground black pepper

Pasta Salad

  • 1 lb. rotini pasta
  • 12 ounces Aidells Spicy Mango with Jalapeno Smoked Chicken Sausage
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 large ripe mango peeled, pitted, and roughly chopped
  • 8 ounces Monterey Jack Cheese shredded
  • 1 jalapeno
