This magical recipe combines semi-sweet chocolate chips, butterscotch chips, peanut butter, and those crispy chow mein noodles to create these addictive little treats. And the best part? No oven needed!

And the best part? You can customize these bad boys however you want—feeling fancy? Add in some chopped nuts or dried fruit. Craving that extra sweetness? Drizzle some caramel over the top. The sky’s the limit when jazzing up these delightful little treats.

Haystack Cookie Variations

  • Use white chocolate chips – You can mix in various flavors of chocolate chips, such as semi-sweet, peanut butter, white chocolate, or rich dark chocolate.
  • Add mixins like peanuts and mini marshmallows.
  • Not a fan of chow mein noodles? Try cornflakes or pretzels.
  • Top with sprinkles or sea salt! If I make these not around the holidays, I will sprinkle them with coarse sea salt. If it’s the holiday season, sprinkles it is!

They’re the kind of cookies that disappear faster than you can say “haystack.” Make a batch for a gathering, and they’ll vanish quicker than you can imagine. Maybe it’s the perfect combination of textures or that addictive mix of chocolate and crunchiness, but haystack cookies make everyone reach for just one more.

These cookies are dangerous, though. Once you start munching on them, it’s hard to stop. They’re addictive little bundles of crunch and sweetness that disappear faster than you can say “haystack.” Trust me, making a double batch might not even be enough—they’re just that good!

Haystack Cookies are easy, like no-bake treats that only need four ingredients. Trust me, they're ridiculously delicious!

  • 4 1/2 cups chow mein crackers
  • 3 tablespoons peanut butter
  • 11 ounces butterscotch chips
  • 12 ounces chocolate chips
  • 1/2 teaspoon coarse sea salt

  • Grab a big baking sheet and line it up with wax paper or a silicone baking mat.
  • In a big bowl, mix butterscotch chips, chocolate chips, and peanut butter. Pop it in the microwave for 1 minute. Give it a good stir. Keep microwaving in 30-second intervals, stirring each time, until the mixture is smooth and well combined, around 2-3 minutes.
  • Mix in the noodles until they're nicely coated.
  • Grab a big ice cream or cookie scoop and swiftly drop about ¼ cup of the mixture onto the lined baking sheet. Top with sea salt or for any special occassion like the holidays, top with sprinkles.
  • Leave it there until it hardens, which usually takes around 2 hours. Once ready, take them off the sheet and keep them in an airtight container for up to 2 weeks.
