If you have been following A Dash of Sanity for sometime you will know that our family has recently obsessed with quiche. Wait, let me correct that I have been, so of course that is what they are eating. I love that you can fill up this classic egg dish with really any of your favorite ingredients and have a deliciously hearty meal.
Our local hospital is known for their amazing breakfast burritos, like award-winning breakfast burritos. While my daughter and I were there the other day for an x-ray {she broke her arm while doing a headstand}, we grabbed one of these mouthwatering burritos. Not only were they what I remembered them being from having my last baby there, but they were only $3 and some change.
These burritos are not little by any means and they are stuffed to the brim and smothered in green chile. Oh, so yummy! We got our filled with bacon, potatoes, and of course cheese. This burrito eating experience inspired this quiche. While I didn’t have time to whip up some green chile I did open the cupboard to see the bottle of Ranch seasoning. And since we love Ranch Breakfast Potatoes, I thought hmmm….why not?
Combining 3 our favorite ways to start the day in one dish: bacon, Ranch, potatoes, and cheese – this dish was bound to be a winner. ย And it is. All of the kids love it and it happens to be my new favorite {although I think I say that with every quiche}.

How do you makeย Ranch Bacon Potato Quiche?

Preheat oven to 400 degrees F (200 degrees C).

Roll out pie crust and place into pie pan.

Cook bacon and roughly chop into crumbles, set aside.

Cook hash browns or breakfast potatoes. I used frozen hash browns and just prepared them according to package directions; cooking over the stovetop for 7 minutes, set aside.

In a large mixing bowl whisk together milk, eggs, and 3 tablespoons ranch seasoning.

Add potatoes, bacon, and cheese into the egg mixture and pour into pie crust.

Sprinkle remaining ranch seasoning over the top of the quiche.

Place in preheated oven and bake for 15 minutes. Then reduce heat, leaving the pie in the oven to 350 degrees F (175 degrees C) and bake for an additional 35 minutes. When it is done the top of the quiche will begin to turn a nice golden brown.

Remove from oven and allow to sit 5-10 minutes before slicing & serving.

I made this tonight and it was delicious! I happened to have a little green onion left over from another recipe ..I chopped some up fine with my kitchen shears for a little added color and flavor :)..I will definitely be making this again:)

I have made this several times because I always have the ingredients on hand. I use the dehydrated hashbrown potatoes that you get at Costco (which are awesome) and make a pie crust from scratch if needed. It is great for leftover lunches. Tonight I threw in some spinach, used less bacon, added an egg because mine were small and substituted cheddar because that is what I had-still great! Next time I may try a homemade ranch seasoning because that is always better. Thank you for a great recipe!
