Recipe Inspiration

About 15 years ago, one Sunday morning, I made a pie for my husband to enjoy later. We were making, as my two daughters, 4 and 8 years old, were โ€œassistingโ€ me. They took the extra dough and rolled it out for 20 minutes, which was perfect as I could finish the filling without stumbling over it. When they finished, they asked, โ€œWhat can we make with this?โ€ Mmmโ€ฆquiche! Itโ€™s easy, simple and something they can do on their own.

Since then, this has become a staple morning meal. I miss the days of feeding 11 kids in the morning. It was always a bit crazy, but I loved every moment. What is great about this recipe is that you can make the dough ahead of time and have all the ingredients prepped when you are ready to make them. The crust can be placed in the ramekin, making the entire process simple.

These mini quiches are so easy and please everyone. I am not a huge morning meat person like the kids, but I love this with fresh veggies like sautรฉed portabella mushrooms and red peppers.

      1. Hi Heather! You can definitely cook the pie crusts ahead of time and refrigerate or freeze until ready to fill and cook. Just let them thaw before baking and adjust the cook time as needed since the crust will already be baked.
