There is one thing, though, that we all love: coffee cake. It has been a staple in our home and family since childhood. Every once in a while, I get the nerve to add a twist or two to this recipe and try something new. This time, it was streusel topping, thanks to the suggestion from my friend Allison, who made it first!
Light, fluffy, and moist, this coffee cake I thought couldn’t be better, but add a cinnamon streusel and a light dusting of powdered sugar, and you have the best pastry to start off your day with.

- 1 yellow box cake mix
- Cold salted butter
- Flour
- Cinnamon
- Brown sugar
- Vanilla extract

Cinnamon Streusel Coffee Cake

Ingredients
Cake
- 1 box yellow cake mix + ingredients on back of box
Cinnamon Streusel Topping
- 1 cup cold salted butter
- 2 1/4 cup flour
- 1 tablespoon cinnamon
- 1 3/4 cup brown sugar
- 1 1/2 tablespoons vanilla
- optional powdered sugar dusting
Instructions
- Spray a 9×13โ cake pan with non-stick cooking spray.
- Prepare cake mix according to package directions. Bake in oven for 15-20 minutes until center is just barely set.
- Meanwhile make your topping, in a large bowl add all your ingredients and with a hand mixer. Mix together until combined and small crumbs form.
- Remove cake from oven and sprinkle on the topping.Place back in the oven and continue baking for 10-15 minutes until browned
- Remove from oven and let cool slightly.Cut and serve each slice with a dusting of powdered sugar.
