Cinnamon Streusel Coffee Cake – A light & fluffy golden cake topped with a classic cinnamon, brown sugar streusel topping.
This coffee cake recipe has been in my family for years, made by one of my mom’s best friends, Shelia. Since then we have made several twists on this delicious recipe. I have to say that this version of Cinnamon Streusel Coffee Cake is by far my favorite. Made with a few simple ingredients make this apart of your Mother’s Day brunch.

Mother’s Day is the one “holiday” that I am picky. The rest of the holidays I am all about what the kids love and the hubby will eat, but Mother’s Day I could really care less if they like what we are having or not.
There is one thing though that we all love and that is coffee cake. Seriously it has been a staple in our home and family since I was a child. Every once in a while I get the gumption to add a twist or two onto this recipe and try something new. This time it was streusel topping, thanks to the suggestion from my friend Allison who made it first!
Light, fluffy and moist this coffee cake I thought couldn’t be better, but add a cinnamon streusel and a light dusting of powdered sugar, you have the best pastry to start off Mother’s Day with.
Whether it is breakfast in bed or brunch to celebrate all the amazing women and mother’s in your life, this Cinnamon Streusel Coffee Cake will be a hit!
I love the month of May. Not only do you have spring, school getting out, neighborhood pools opening up, flowers blooming, but also Mother’s Day. The day I lounge in jammies and don’t think about the store or whatever. I love seeing the bustle around my house of the kids making last-minute cards and my husband making something delicious on the grill.
Being a mom to 5 kids, makes my heart want to burst. To say I am blessed is an understatement. Time flies. I cherish the days of their little hand made notes out of paint and crayons, but I will say having one kid two weeks from driving is pretty amazing.
What is amazing about this Cinnamon Streusel Coffee Cake recipe is that the kids can even make it themselves.
How to make Cinnamon Streusel Coffee Cake.
- Spray a 9×13” cake pan with non-stick cooking spray.
- Prepare cake mix according to package directions.
- Bake in the oven for 15-20 minutes until center is just barely set.
- Meanwhile make your topping, in a large bowl add all your ingredients and with a hand mixer. Mix together until combined and small crumbs form.
- Remove cake from oven and sprinkle on the topping.
- Place back in the oven and continue baking for 10-15 minutes until browned.
- Remove from oven and let cool slightly.
- Cut and serve each slice with a dusting of powdered sugar.

Ingredients
Cake
- 1 box yellow cake mix + ingredients on back of box
Cinnamon Streusel Topping
- 1 cup cold salted butter
- 2 1/4 cup flour
- 1 tablespoon cinnamon
- 1 3/4 cup brown sugar
- 1 1/2 tablespoons vanilla
- optional powdered sugar dusting
Instructions
