This slow cooker Cafe Rio copycat Mexican chicken is simple to make and insanely delicious. Wrap it in a tortilla, smother it with queso, and enjoy every bite.

This slow cooker recipe for Cafe Rio’s shredded chicken is the bomb: juicy and flavorful, and I can make it work with any meal. 

Every Sunday in our home, we have “Taco Sunday.” It means the day we eat Mexican food. While I look forward to a nice, fully loaded burrito topped with queso, my kids, on the other, just want queso (with maybe a few chips on the side).

During the school year, I love making meals that I can prepare in large batches and use the leftovers for lunches or even dinner the next day. This Slow-Cooker Mexican Shredded Chicken is great for leftovers the next night, or you can freeze it for another easy meal later.

One of my most requested recipes is my copycat recipe for Cafe Rio Chicken. I think this is my favorite night of the week. The girls eat every last bite. I serve this recipe for Slow-Cooker Mexican Shredded Chicken with homemade salsa and a salad bar that makes my heart skip a beat.

Copycat Cafe Rio Chicken

This chicken recipe will be a huge hit not matter how you serve it, whether it’s for a salad bar, burrito-bowls, a traditional burrito, tacos, or top-on nachos.

Our favorite way to eat this Mexican chicken is by making smothered burrito with queso and Colorado Chile Sauce.

I am not the only one who feels crazy during the busy weekdays. A lot of the time it feels like we are just trying to squeeze everything in. My slow cooker helps me create flavorful food and gives me more time to do other things.

How to Make Cafe Rio Chicken

  • Combine all of the ingredients in the slow cooker. Turn on high for 3-4 hours or low for 6-7.
  • Remove the cooked chicken from the slow cooker and shred it. Serve it as a taco, burrito, salad, or nacho-fixings.
  • Place cooled leftover chicken in an airtight container and press a plastic wrap up against the top. Refrigerate for up to 4 days.

Ingredients
 

  • 3 lbs boneless-skinless chicken breast or thighs
  • 1 cup water
  • 2/3 cup Italian dressing
  • 1/3 cup Ranch dressing seasoning
  • 2 teaspoons salt
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 2 teaspoons minced garlic
  • 2 teaspoons taco seasoning

Slow Cooker Mexican Shredded Chicken

  • Combine all of the ingredients in the slow cooker.
    Turn on high for 3-4 hours or low for 6-7.
  • Once chicken is completely cooked, shred chicken and prepare taco, burrito and/or nacho fixings.

Cafe Rio Shredded Chicken Smothered Burrito

  • Add chicken and shredded cheese into a large tortilla.
    Add in rice and beans as well, if desired.
  • Wrap up the burrito tightly. 
    Pour on a generous portion of queso and Colorado Chile Sauce.
    Top with diced tomatoes, shredded lettuce and fresh cilantro.

To make a small portion cut the recipe ingredients in half.

    1. Yes in this recipe it does work together! We use zesty Italian dressing. It is like a vinaigrette, not creamy. Any brand will do! I hope you enjoy it.
