I am a sucker for mouthwatering slow cooker recipes, especially if it’s Mexican food. I am pretty much addicted to Cafe Rio’s shredded chicken; I love it sooo much. However, I prefer my homemade version more. It’s juicy and flavorful, and I can make it work with really any meal.
My favorite aspect of this recipe for Slow Cooker Mexican Shredded Chicken is I can use it in so many ways. I can make it for tacos, salads or my favorite – as a smothered stuffed burrito.
Every Sunday in our home we have “taco Sunday“. It really means the day we eat Mexican food. While I look forward to a nice, fully-loaded burrito topped with queso, my kids on the other, just want queso (with maybe a few chips on the side).
During this holiday season when we are busy with parties, rehearsals and sporting events, it’s so nice to find delicious meals that are easy to prepare. And that’s exactly what this Slow Cooker Mexican Shredded Chicken is. It makes a large batch, meaning you can have leftovers for the next night, or you can freeze it for another easy meal later.
This is seriously one of my most requested recipes and I honestly can’t believe that I am just now sharing it with you. The past two summers I have cooked up at a girl’s camp for my church, and each year I made this recipe for Copycat Cafe Rio Chicken. I think this is the favorite night of the week. The girls seriously eat every last bite. I serve this recipe for Slow Cooker Mexican Shredded Chicken with homemade salsa and a salad bar that makes my heart skip a beat.
So whether you serve this with a salad bar or fill up either a burrito, taco or top on nachos with this shredded chicken, it will be a huge hit. I love that for the day I took these pictures we used queso {store bought} and Colorado Chile Sauce to drench our burritos in. While I used store-bought queso to make it quick and easy, I seriously love my SLOW COOKER GREEN CHILE QUESO. Oh…my…goodness. I am seriously even drooling looking at this picture now. Aren’t you? Like I want to have it for lunch and don’t mind myself if I do.
I know I am not the only one who feels crazy during the holiday season. It sometimes feels like there’s not enough time to squeeze everything in, but using my slow cooker helps me create food that is full of flavor and gives me more time to do other things.

How do you make slow cooker chicken?
- Combine all of the ingredients in the slow cooker.
- Turn on high for 3-4 hours or low for 6-7.
- Once the chicken is completely cooked, shred chicken and prepare taco, burrito and/or nacho fixings.
- Cafe Rio Shredded Chicken Smothered Burritos
- Add chicken and shredded cheese into a large tortilla.
- Add in rice and beans as well, if desired.
- Wrap up the burrito tightly.
- Pour on a generous portion of Queso and Colorado Chile Sauce.
- Top with diced tomatoes, shredded lettuce, and fresh cilantro.

Ingredients
- 4 large chicken breasts
- 1 cup water
- 1 cup Italian dressing
- 5 tablespoons Ranch dressing seasoning 2 x 11 ounce packets
- 2 teaspoons salt
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 2 teaspoons minced garlic
- 2 teaspoons taco seasoning
Burrito Ingredients
- 12 large flour tortillas
- homemade or store bought Queso recipe link below
- diced tomatoes
- shredded lettuce
- torn cilantro

What kind of italian dressing is best?? Italian dressing and taco seasoning would go good together??
Yes in this recipe it does work together! We use zesty Italian dressing. It is like a vinaigrette, not creamy. Any brand will do! I hope you enjoy it.
