This mango salsa recipe was inspired by literally the best taco I’ve ever had, and that was in Alaska, of all places.

I recently enjoyed exploring Alaska on a Princess cruise with my sister and some of my dearest friends. Before leaving, I envisioned a trip complete of snow, parkas and hot cocoa. Never in my life did I think I would have the best tacos. But friends, that’s precisely what happened.
My Favorite Kitchen Tools To Make This Recipe
From trusty pots and pans to handy gadgets, I’ve curated a list of products I use and love.

I’m sharing this mango salsa recipe, inspired by the best halibut taco I’ve ever had while sailing in Alaska.

My sister Nicole and I decided to cruise in Alaska, and when we got to Juneau, we decided to take a seaplane adventure.
Hands down, the Pack Creek Bear Viewing was the best outdoor experience I’ve had. I live in Colorado and have traveled to some pretty amazing places, so this is a big deal. We saw nature at its best, including seeing a mama bear and two cubs. We were within 40 yards and even saw her nurse them! While bear viewing, we also saw a ton of eagles. I never knew eagles were so big, and their wingspan is enormous.
When we returned from our flight to the dock, I thought the day couldn’t get any better—that is, until I tasted the tacos.

Friends, the best tacos I have ever had were at Deckhand Dave’s Wild Alaskan Fish Tacos food truck {Drooling}. With a fantastic slaw, pico, and tartar sauce, the combination alone has me wanting to jump on a plane.
While I haven’t nearly perfected the tacos, pico, or tartar sauce, this Mango Salsa recipe is pretty dang delicious.
