Who would’ve thought a simple crostini could be so mouthwatering and easy! Ready in under 20-minutes, it makes you the ultimate “chef” in the kitchen. This recipe for Chili Rubbed Shrimp and Avocado Crostini is eye-catching and mouthwatering, making a perfect centerpiece, appetizer or have as the main course complete with a salad.

I am always on the lookout for recipes that combine foods my family loves and incorporates them into one dish. This time it was shrimp and avocado spread. If the recipe is easy to prepare and I can make it under 30 minutes, I consider it a huge success. And this recipe for Chili Rubbed Shrimp and Avocado Crostini is a huge success, and my family loved it.

I had these waiting for them after school one day, and I didn’t think to say anything about saving some for my husband. Shortly after he got home from work, I noticed there was only one crostini left, so I assumed my husband had devoured most of them. When I asked if he loved them, he said he hadn’t even tried them yet. Oops… the kids had only saved one for their dad, which he immediately ate.

This Chili Rubbed Shrimp and Avocado Crostini recipe was inspired by the mere fact that my kids’ recent favorite snack is Simply Avocado Dip & Spread with chips, crackers, pretzels or veggies after school. They can just grab it from the fridge and eat. It makes me happy knowing they are getting a snack that fuels their body that’s not full of sugar or carbs.

CHILI RUBBED SHRIMP AND AVOCADO CROSTINI on pan

How do you make crostini?

Preheat oven on broil to 500 degrees.

Place baguette slices on a baking sheet and lightly spray with olive oil.

Place in oven and toast until a nice lightly golden brown.

Remove from oven and all baguette slices to cool.

Add shrimp to a small mixing bowl and season with chili and garlic powder, salt, cumin, and smoked paprika.

Toss to coat shrimp in the seasoning.

Heat a large saute pan over medium-high heat.

Add 2 teaspoons of olive oil and add shrimp.

Fry in a pan over medium-high heat until shrimp are thoroughly cooked; bright pink and opaque, about 3-5 minutes, making sure to flip the shrimp frequently to cook evenly on each side.

Once shrimp are completely cooked, remove from heat.

Spread 1 tablespoon of Simply Avocado with Sea Salt Dip & Spread on each cooled baguette.

Repeat with remaining toasted baguette slices.

Place on cooked shrimp on top of each baguette, placing on top of the Simply Avocado spread.

Garnish with chopped green onions and serve immediately.

  • 12 raw large shrimp shelled and devined
  • 12 slices of baguette
  • 1 1/2 teaspoons chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon smoked paprika
  • 12 tablespoons Simply Avocado Sea Salt Dip & Spread
  • 2 teaspoons olive oil plus more for toasting bread
  • chives finely chopped

Instructions
