This easy and cheesy lasagna recipe only takes 30 minutes to make! This comforting meal is much easier than making a conventional lasagna. After you try this version, you will never need another lasagna recipe!

I love easy dinners, especially on the crazy weeknights. If I can find a meal that can be made in under 30 minutes and the entire family loves it, it’s a winner and will be repeated, repeated, and repeated.

This Easy Skillet Lasagna would be something everyone would love because they love my Ravioli Lasagna recipe. And this is an easy take on that, except that I tend to have lasagna noodles on hand, and not ravioli, so both recipes are simple to make and really my family loves them more than your traditional oven-baked lasagna.

Ingredients for skillet lasagna

Moreover, this lasagna recipe is an easy way to enjoy all the flavors of the traditional recipes, without any of the hassles! Noodles don’t need to be precooked, and it all comes together quickly and easily in a skillet.

Italian Sausage: you can easily swap this out for ground beef, ground chicken, or ground Turkey. If you want, leave the meat out and add extra vegetables instead.

Spaghetti sauce & diced tomatoes: I prefer to use marinara sauce, which comes in a jar or can. It’s fine if you make it yourself. I add a can of diced tomatoes for texture and the extra liquid from the can helps with keeping this dish from drying out.

No boil lasagna noodles: I used no boil, oven-ready lasagna noodles. This helps save time and makes your dish a little saucier. Yum!

Spices: I prefer Italian seasoning, but use whatever spices you like in your lasagna. The Italian seasoning just makes it easier.

Ricotta filling: For the cheese center of this skillet lasagna recipe I used a combination of ricotta cheese, cream of onion soup, which adds a ton of flavor and makes the cheese filling a bit saucy, and eggs. The first time I read about adding cream of onion soup to your lasagna filling, I was shocked & grossed out, but after trying it, we loved it!

How do you make skillet lasagna?

In a large saucepan, brown the Italian sausage and garlic over medium-high heat until the meat is no longer pink, breaking it up while cooking.

In a small bowl, combine the soup, eggs, cottage cheese, and Italian seasoning.

Next, add the tomatoes and spaghetti sauce to the pan, and stir until combined. Heat all the way through until hot, then pour it into a large mixing bowl or measuring cup. Set aside.

Return 1-1/2 cups of meat sauce to the pan; spread evenly over the surface. Layer one cup of the ricotta mixture and spread it over the sauce.

Repeat layers of ricotta cheese mixture, meat sauce, and noodles. Top with remaining meat sauce. Bring to a boil. Then reduce heat to a simmer or low; cover and simmer for 15-17 minutes or until noodles are tender.

Remove from the heat. Sprinkle with shredded cheese; cover and let stand for 3-4 minutes or until cheese is melted. Top with freshly chopped basil or parsley.

Sandra’s Tips

  • This recipe is easy to refrigerate, just allow the skillet lasagna to cool, then store it in an airtight container. It should last 3-4 days in your fridge.
  • Lasagna freezes well, just allow the lasagna to cool completely before sealing it in a tight-lid container. It may be kept frozen for up to two months, so be sure to mark your date of making it before placing it in the freezer.
  • If frozen, thaw the lasagna in the fridge overnight. To reheat, warm it in a skillet over medium heat until boiling, then simmer for 10 minutes, or microwave individual servings in 30–60 second intervals until heated through.

  • 1 1/2 ounces mozzarella cheese thinly sliced
  • 1 tablespoons freshly chopped basil
